Ingredients

Instructions

  • Prepare your glass jars by making sure that they are clean and ready to go. This recipe will make about one cup of ketchup . In a large stockpot on medium heat, cook tomatoes uncovered. While the tomatoes begin to soften, attempt to mash them down and also stir them as needed. It should take about 10-15 minutes to cook and mash the tomatoes as needed.

  • Allow the tomatoes to cool down to room temperature, about five minutes. Meanwhile, place 'mesh' strainer over the top of a new pot. When the the tomatoes have cooled you can strain them into the new pot and place that pot on to the stove. Add the remaining ingredients to the pot and bring the ingredients to a boil. Once it starts to boil, reduce the heat to a simmer and cook the ketchup until thick, stirring occasionally, about an hour.

  • Transfer the ketchup to a food processor and process to your desired consistency. Then transfer to your prepared jars and allow to cool. This ketchup should keep for up to two weeks in the refrigerator if stored properly.

Recipe Notes

I mentioned that the flavor of this ketchup can easily be adjusted by omitting or adding additional ingredients. Also mentioned above was how to thin this ketchup out or thicken it as desired.

Also mentioned, was how to store this homemade ketchup.
Because of the acidity that is normal to ketchup, it is recommended that you store this in a glass storage container such as the kind used for preserving. The container should be covered and kept in a refrigerator when not in use.
