Summer Fruit Pizza

A colorful and impressing dessert treat especially during the warm weather months. This recipe has no added sugar beyond was is in the fruit.

Ingredients

  • The Curst:
  • All Purpose Flour 1 ¼ cup
  • Butter- 1 stick softened
  • Confectioners sugar Alternative - I use ¾ cup of Splenda +2 tablespoons cornstarch
  • Vanilla Extract 1 tsp
  • Corn starch- 1 ½ tablespoons omit if using confectioners sugar
  • The base
  • Cream cheese- 1 8 ounce package softened
  • Sugar alternative ½ cup equivalent +Corn starch- 1 ½ tablespoons
  • The topping
  • This is the fruit and other optional ingredients that you put on top.
  • You will need about 2 cups of fruit in total. This depends on the fruit that you are using. Whole berries look nice as is and strawberries look best sliced. Avoid using bananas as they will turn.

Instructions

  • This is a three step process. We bake the crust. We then top the crust with the base and then we add the topping (fruit)
  • To make the crust- combine ingredients above until you are able to form a ball.
  • Press this out into a 10-12" pizza pan.
  • Bake for 12-15 minutes at 350 until hard.
  • Remove from oven and allow to cool.
  • The Base
  • Cream above ingredients together until smooth. Spread over the cooled crust
  • The topping-
  • Slice the larger fruit into slices that can be arranged easily on the pizza. The larger slices should go on the outer edges.
  • The smaller fruit that does not need to be cut up can be used to cover bare spots and add color.
  • Flatter slices work well between the center and the outer edge with the larger fruit.
