Sugar Free and Gluten Free Chocolate Chip Cookies

This is a recipe for chocolate chip cookies that are sugar free and gluten free as well.

Ingredients

  • Gluten Free Flour Alternative- 2 ½ cups see post for details
  • Baking Soda- 1 tsp
  • Salt- 1 tsp
  • Xanthan Gum- 1 teaspoon can be omitted- see post
  • Butter or alternative such as coconut oil- 1 cup softened
  • Sugar Alternative- ¾ cup equivalent
  • Brown Sugar Alternative such as Coconut Palm Sugar- ¾ cup equivalent
  • Vanilla Extract- 1 ½ tsp
  • Eggs -2
  • Sugar Free Chocolate Chips- one bag- about 12 ounces

Instructions

  • Preheat your oven to 375, prep your pans as needed. I prefer using silicon mats or parchment paper.
  • In a medium bowl, mix together the flour alternative, baking soda, and salt. Set this aside.
  • In a large mixing bowl, preferably using a mixer, blend together the butter, sugar alternatives, and the vanilla extract.
  • Once the items in the mixing bowl are blended, you can add the eggs one at a time, mixing between additions. You will probably need to scrape the sides of the bowl while this mixes if you find that the dough is sticking to the sides. Be sure to stop blending when you do so of course.
  • Slowly add the dry ingredients from the medium bowl to the mixing bowl mixing well. Scraping the bowl sides as needed.
  • Now fold in the chocolate chips.
  • Bake for 10-12 minutes or until done. Allow to cool for a couple of minutes on pan and then transfer to racks for cooling.
