Ingredients

  • 3 Egg Whites - -Your egg whites should be at room temperature.
  • ½ tsp Salt
  • 1 tsp Vanilla Extract
  • ¾ cup Sugar Alternative - -Use a granular sugar alternative that measures like sugar and that can also be baked with.
  • 1 cup Unsweetened Shredded Coconut
  • 2 cup Corn Flake Cereal. --Look for a lower or no added sugar cereal.

Instructions

  • Prepare. Preheat your oven to 350f. Also, prep your baking sheet(s) for nonstick. Parchment paper or a baking mat should work in this recipe.
  • Beat. Using a whisk attachment, beat the egg whites, salt, and vanilla extract on high until stiff peaks form. This should take about four to six minutes when using a stand mixer and slightly longer with a hand mixer.
  • Fold. Use a rubber spatula, or similar item, to fold in the sugar alternative about two tablespoons at a time. Then fold in the shredded coconut followed by the corn flake cereal.
  • Drop. Use a tablespoon to drop 'dollops' of the cookie batter on to your prepared cookies sheet, about two inches apart from one another.
  • Bake. Bake the cookies for 18-20 minutes or until they begin to turn golden brown on top. They may be a bit soft in the center but should set while cooling.
  • Cool. Allow the cookies to fully set and cool on the baking sheet before serving.
