  • Preheat your oven to 350 and prep a baking sheet with parchment paper.

  • In a small bowl, use a whisk or a fork to mix together the almond flour with the baking powder.

  • Next, in a mixing bowl, beat together the eggs with the sugar alternative. Then add the melted butter, almond flour from the first bowl, and the vanilla extract. Fold in ½ cup of the marshmallows and chocolate chips by hand.

  • Use a cookie dough scoop to place the cookie dough onto the prepped cookies sheet about 2" apart from one another. Then bake for 12 minutes, remove from the oven and top with remaining marshmallows and the chocolate chunks. These cookies should be stored in a refrigerator for up to five days.
Feel free to freeze any leftovers, allowing them to thaw before eating them.
Using dark chocolate works best with this recipe.
I mentioned that this recipe works best when you use sugar free (dark preferred) chocolate bar and sugar free chocolate chips (dark preferred). The "dark chocolate" is preferred because it is more true to the original s'more recipe and also because it bakes better in this cookie.
