This is a tasty cookie that features the usual chocolate and marshmallows that you would expect from anything "S'More".
However, this recipe does not have the sugar that you would expect from the average s'more anything!

It takes just three ingredients (graham crackers, marshmallows, and a chocolate candy bar) along with a campfire.
Making s'more cookies is a bit more intense.
This is especially true when you are making s'more cookies without adding sugar.
However, this is an easy task when you bake without sugar like we do here.

The 'gooey' chocolate in these cookies comes especially from using two different kinds of chocolate.
For this recipe, that means a sugar free (dark preferred) chocolate bar and sugar free chocolate chips (dark preferred).
Here are some more helpful tips.
- These cookies can be frozen once that have been baked and cooled. I suggest thawing them out before eating them.
- To make these cookies crunchy the next day or later, simply place them into an oven on 350 for about five minutes. A toaster oven is perfect for this.
- This recipe works better with smaller marshmallows. If you cannot find sugar free mini marshmallows, simply cut regular sized sugar free marshmallows to size.
- Monk Fruit is used to as a sugar replacement in these cookies. It is okay to use the sugar alternative of your choices as long as it measures 1:1 with monk fruit and can be baked with.

These cookies should be stored in a refrigerator for up to five days.
Feel free to freeze any leftovers, allowing them to thaw before eating them.
Using dark chocolate works best with this recipe.
I mentioned that this recipe works best when you use sugar free (dark preferred) chocolate bar and sugar free chocolate chips (dark preferred). The "dark chocolate" is preferred because it is more true to the original s'more recipe and also because it bakes better in this cookie.
Ingredients needed to make these sugar free cookies.
- Almond Flour- 2 ½ cups.
- Baking Powder- 1 teaspoon.
- Eggs- 2.
- Granulated Sugar Alternative- ⅔ cup. This recipe was made with golden monk fruit. To use an alternative, please make sure that it is granular, measures 1:1 with sugar, and can be baked with.
- Butter- ⅓ cup melted. That is about five tablespoons with an extra teaspoon of butter.
- Vanilla Extract- 1 teaspoon.
- Sugar Free Chocolate Chips- ⅓ cup, dark preferred.
- Sugar Free Marshmallows- ¾ cup divided. This recipe works better with smaller marshmallows. If you cannot find sugar free mini marshmallows, simply cut regular sized sugar free marshmallows to size.
- Sugar Free Chocolate Bar- ½ cup chopped into chunks.
How to make s'more cookies without sugar.
- Preheat your oven to 350 and prep a baking sheet with parchment paper.
- In a small bowl, use a whisk or a fork to mix together the almond flour with the baking powder.
- Next, in a mixing bowl, beat together the eggs with the sugar alternative. Then add the melted butter, almond flour from the first bowl, and the vanilla extract. Fold in ½ cup of the marshmallows and chocolate chips by hand.
- Use a cookie dough scoop to place the cookie dough onto the prepped cookies sheet about 2" apart from one another. Then bake for 12 minutes, remove from the oven and top with remaining marshmallows and the chocolate chunks. Return the cookies to the oven and baked for another five minutes or until they begin to brown.
- Allow the cookies to fully cool before removing them from the cookie sheet.
