If you brew the coffee for use in this recipe, rather than using refrigerated leftover coffee, please allow the coffee to cool before adding it to this recipe.

Ingredients needed to make coffee and coconut milk popsicles
- Brewed Coffee- 2 cups. Coffee should be cool or cold before adding it to this recipe.
- Stevia- 3 teaspoons or as desired. Omit this if it is already in your coffee. You can use another sugar alternative as well if desired.
- Almond Milk-1 cup. Feel free to sub in any vegan milk , low carb milk or regular milk, of your choice.
- Vegan heavy Cream- 1 cup. Non-vegans are able to use regular heavy cream if desired.
- Sugar Free Chocolate Chips- ½ cup. Feel free to adjust the amount added to each popsicle as desired.
How to make Iced Coffee Popsicles
- Start by blending in the stevia with the coffee. Pour the coffee into the mold filling the molds ⅓ of the way. Then place the molds into the freezer for 20 minutes.
- In a blender or large bowl, blend together the milk with the heavy cream. Feel free to add additional sweetener if desire for taste. When the 20 minutes has subsided, pull the popsicles from the freezer and fill each mold another third of the way with the blended cream and milk. Then return this to the freezer for another 20 minutes.
- Meanwhile, while the popsicles are in the freezer, combine the remaining ingredients together to make the last layer. Remove the popsicles from the freezer and fill the remaining ingredients to each mold. Freeze until hard.
- Note- to make alternating layers simply pull a quarter of the coffee mixture and a quarter of the milk mixture and combine them together. Then alternate the layers in each mold.
- Also, feel free to add the chocolate chips as desired to each layer before freezing.
