    I must say that since posting this recipe years ago, there has been kind of an explosion in sugar free, or even keto, baking. Unlike today, one time there was just one kind of sugar free chocolate chip available.

    There are many kinds of sugar free chocolate chips to choose from!

    I suggest using a chocolate chip that contains the sugar alternative that you prefer most.
    Also, that chocolate chip should be suitable for baking with as well.

     

    People always ask, what makes a cookies soft or crispy.

    I have got to say, sometimes you want a soft cookie and sometimes you simply want a crispy cookie. This cookie is somewhere in the middle since it is a basic recipe.

    What you should know is that not using sugar can alter this sugar free cookie.

    Sugar allows a cookie to hold on to moisture and sugar alternatives just do not have this chemical makeup. As a result, we need to make adjustments when baking sugar free cookies.

    I just mentioned that sugar and sugar alternatives may taste alike but, their chemical makeup is different. As a result of this, adjustments may need to be made depending on the ingredients that are added to these cookies.

    Here are some more helpful tips for you.

    1. Obviously, this recipe call for using ingredients that are sugar alternatives. Please make sure that the sugar alternatives that you use in this recipe measure 1:1 with sugar or brown sugar and that they can be baked with.
    2. Make this chocolate chip cookie recipe gluten free by using gluten free flour instead of regular flour. Please check the label on the packaging to assure that the gluten free flour does measure 1:1 with all purpose flour. Also, check the label to see if a binder will be needed.
    3. Or, you can make this recipe low carb by using low carb Carbalose flour (not the baking mix!). Lastly, you can make this 'keto friendly' by using a keto friendly flour.. Please read all labels to make sure that your choice of flour measures 1:1 with AP flour and if a binder will be needed.

    The ingredients needed to make sugar free chocolate chip cookies.

    • Flour- 2 ¼ cups.
      To make this recipe low carb try a low carb flour alternative such as Carbalose flour (not the baking mix!). Lastly, you can make this 'keto friendly' by using a keto friendly flour.. Please read all labels to make sure that your choice of flour measures 1:1 with AP flour and if a binder will be needed.
    • Baking Soda- 1 teaspoon.
    • Butter- 1 cup + 1 tablespoon. The is 17 tablespoons or two sticks plus a tablespoon. Have you butter softened to room temperature to make it easier to work with as well.
    • Granular White Sugar Alternative - 1 cup. Use a sugar alternative that measures 1:1 with sugar for best results.
    • Brown Sugar Alternative - ½ cup. Use granular that measures 1:1 with sugar in volume.
    • Eggs- 2.
    • Vanilla Extract- 1 teaspoon.
    • Sugar Free Chocolate Chips- 1 cup.
    • Optional- chopped nuts as desired.

    How to make The Best Sugar Free Chocolate Chip Cookies

     

    • Start by preheating your oven to 350 and prepping a cookie sheet for nonstick (I use parchment paper for an easy clean up).
    • In a medium sized mixing bowl, whisk together the flour and baking soda. Set this bowl aside.
    • Next, in a large mixing bowl, cream together the butter and the sugar alternatives. I use a paddle attachment and scrape the sides of the bowl as needed.
    • For the next step we are going to add the dry ingredients from the first bowl to the ingredients in the second bowl. To do so, add half of the dry ingredients to the mixing bowl, stir gently and then add the remaining ingredients and stir gently again. Then add the eggs and the vanilla extract. Mix these ingredient until just blended, do not overmix!
    • Lastly, fold in the chocolate chips. Bake your cookies for 10-12 minutes or until they begin to brown. Larger cookies will most likely take longer than smaller cookies to bake. Also, some folks prefer their cookies baked longer than others.

    • 2 ¼ cups Flour -see post for alternatives for low carb or gluten free
    • 1 tsp Baking Soda
    • 17 tbsp Butter -softened to room temp
    • 1 cup Splenda -see post for alternatives, use a granular sugar alternative that measures 1:1 with sugar and can be baked with.
    • ½ cup Surkin Gold -see post for alternatives, use a brown sugar alternative that is granular, can be baked with, and measures 1:1 with sugar.
    • 2 Eggs - room temperature
    • 1 tsp Vanilla Extract
    • 1 cup Sugar Free Chocolate Chips - see post for details
    TIP: Use a sugar alternative that measures 1:1 with sugar for best results!

    Instructions

    • Start by preheating your oven to 350 and prepping a cookie sheet for nonstick.

    • Stir in the dry ingredients from the medium mixing bowl (flour and baking soda) until just blended Then stir in the eggs and the vanilla extract. Do not over mix. Then fold in the chocolate chips.

      what can I substitute for white corn syrup when making scotcharoos bars?

        I hear that agave nectar can be used in a 4:3 ratio (corn syrup to agave) equivalent. I have also seen sugar free substitutes. I have never used these as a substitute in a bar recipe such as scotcharoos. Hope this helps 🙂

      Very misleading, as coconut sugar is in fact sugar.

        Hi- yes you are right that coconut sugar is indeed sugar. However, Coconut palm sugar is considered a healthier option for people with diabetes because it contains less pure fructose than other sweeteners.Some researchers say that it has a lower glycemic index which is why I use it. As with all of my recipes, I encourage my readers to use the sugar alternative of their choice. You can find a listing of brown sugar alternatives that are not coconut palm sugar here. Thanks!!

      I made this recipe a few days ago. The texture of the dough, when raw, is just like regular chocolate chip cookies. That is difficult to achieve. After cooking, they were very dry, though I did not overcook them. What I disliked most is that they are barely sweet at all. I have been diabetic for 17 years, so I am used to the taste of sugar free desserts. These are difficult to enjoy as a dessert. Next time, I am going to try adding some agave nectar in hopes of them being sweeter and chewier. All in all, this is the best recipe I have tried yet. Achieving a good sugar free chocolate chip cookie is right up there with the elusive sugar free brownie worth eating. I appreciate this recipe though. Thank you!

      Delicious! I doubled the Splenda and used 2 tablespoons of brown sugar since I didn't have coconut palm sugar on hand. I used a mixture of white whole wheat flour and oat flour to increase the fiber and make up for the real sugar. Texture was good, crumbly and a bit dry but that's to be expected with that flour combo. Thanks for the recipe! Hubby was thrilled to get real cookies fresh from the oven.

      These cookies were very good. I made them for a friend that recently learned was diabetic and craving chocolate chip cookies. I even loved them and I can eat sugar. Would you know approximately how many carbs are in each cookie?

        Hi. I would try it first as the recipe describes because granulated sugar alternatives can dry things out as they do not hold on to moisture like sugar does.
