I say that because there is little effort in making it.
Easy Homemade Thai Salad
You may think that what most makes this salad so 'Thai' has something to do with the vegetables and how they are prepared.
However, I think it really is all about the dressing that the ingredients are tossed in that makes this salad taste so Thai.
Like so many salad recipes, a Thai salad really has no set definition.
What I mean by that is that you do not have to have any 'for sure' or 'definite' ingredients.
It is really more about how those ingredients are presented with their surrounding dressing.
To be honest, I am all about salads when the weather is warm outside.
I like how a salad can be the perfect meal on a beautiful but, warm day.
Even better, enjoying the fresh produce of the season makes a salad even better in my opinion.
When it comes to a salad such as this one, it really is the colors of the ingredients that makes it even more interesting.
We are use to seeing this salad with a lot of green in it for example. However, offering a balance of colors can be equally important as well, especially when it comes to providing a tasty looking presentation for your meal.
Having said all that, I must also say that there really are no rules when it comes to how to slice the ingredients.
What is common in these salads is have a light, yet tangy tasting dressing on those ingredients. Perhaps that is what binds together every recipe for this salad together are the same kind of salad.
This salad recipe is more of western recipe rather than an authentic Thai cuisine version.
Obviously, one reason for that would be that this is an English speaking site that is thus, not claiming to be anything that it is not. But, the more important reason for this recipe having a western-influence lies in the availability of fresh ingredients. I mentioned that this is a favorite warm weather dish, when the produce is fresh for making it.
Cucumbers are a common ingredient in most Thai salads.
This salad is no different. The cucumbers that you use should be halved, and seeded before adding them to the salad.
We are also using carrots.
I am mentioning this mostly because the carrots add both color and a balance of shape to this recipe.
Cut your carrots in a Julienne, or stick-like shape, to achieve this balance of shape and color in your salad.
I have also added a few other ingredients to the list.
Chickpeas are added for protein (sub in another protein if you are a low carb person). If you are using canned chickpeas, please have them drained and rinsed before adding them to the recipe.
You will also need sesame seeds in this recipe.
Sesame seeds add a bit of crunch to the salad. They also add a reminder that this is indeed an Asian inspired recipe at heart.

As mentioned, you will need Chickpeas . They are added for protein (sub in another protein if you are a low carb person). If you are using canned chickpeas, please have them drained and rinsed before adding them to the recipe.

What you will need to make this Easy Homemade Thai Salad
- Cucumbers- 2. The cucumbers that you use should be halved, and seeded before adding them to the salad.
- Carrots- 2 large. Cut your carrots in a Julienne, or stick-like shape, to achieve a nice balance of shape and color in your salad. That is about 15 of the mini or baby carrots, depending on the size, if you are using those instead (cut the ends off the slice into sticks),
- Chickpeas- 1 15-16 ounce can or two cups.If you are using canned chickpeas, please have them drained and rinsed before adding them to the recipe.
- Sesame Seeds- 1 -2 tablespoons.
- Cilantro- ¼ cup, chopped.
How to make the dressing for this Easy Homemade Thai Salad.
- Olive Oil- 5 tablespoons. Can use sesame oil or a combination of the two.
- Lime Juice- 4 tablespoons. You can alternatively use a rice vinegar.
- Soy Sauce- 1 tablespoon.
- Garlic- 1 clove minced
- Sugar Alternative- equivalent to ½-1 tablespoon of sugar (depending on how sweet you want this).
How to make Easy Homemade Thai Salad
As you may suspect, this is a pretty easy salad to make.
However, this is true once you get your ingredients prepped and assembled.
- I suggest using a large bowl that you can serve this salad in.
- In that large serving bowl, toss together the cucumbers, carrots, and chickpeas.
- Using a smaller bowl, prepare your dressing using a whisk. Once prepared, pour half of it into the bowl with the salad mix. Then, toss the salad, adding additional teaspoons of dressing as needed.
- Drizzle additional dressing on top of the salad as needed.
- Lastly, distribute the remaining ingredients over your salad and serve.
- Tip: serve with a slice of avocado and/ or add some shrimp, chicken or tuna on top.
