Peanuts, in some kind of moderation are okay on a keto diet. While they do have protein and fiber, peanuts do have some carbohydrates in them.
Peanut butter on the other hand, has ingredients other than peanuts in it.
It is very common for peanut butter to have sugar added to it, which is why I prefer to make my own. You can also find sugar free peanut butter online.
Some people ask what kind of cookies are vegan.
As you may suspect, vegan cookies are cookies made with no added animal products. When it comes to cookie dough, that usually means no added dairy products such as eggs or butter.
Luckily, there are alternatives to dairy ingredients that are also vegan.
I should also mention that we will be using ingredients that are also gluten free and low in carbohydrates. This is really a great tasting cookie with all of the alternatives that we are using in it!
Here are some tips for making vegan cookies.
I mentioned above that using peanut butter that has no added ingredients in it will help insure that your cookies are both vegan and low in carbs. You can make your own peanut butter or purchase low carb sugar free peanut butter online.

- So, I get that not everyone is not following a vegan diet but, may still want to bake these cookies. To do so, simply sub in two eggs for the flaxseed and water. Also, you can use another fat such as butter for the coconut oil.
- Baking time is important in this recipe. When peanut butter cookies are overbaked they can become crumbly. In the case of these cookies, bake them for 10 minutes if you would like them to be soft in the middle. However, if you prefer more crunchy cookies bake them up to 15 minutes or until they edges begin to turn golden brown. Then allow them to cool on the baking sheet.
- Yes, this is a 'peanut butter' cookie. However, you could use anothersugar free nut butter instead of peanut butter if you would like to. I like to mix mine up sometimes. 🙂

I mentioned above that if you want this cookie to be completely vegan, you should follow the ingredients and instructions as stated below. Please make sure that you peanut butter is all vegan as well.
For sugar free and keto low carb diet folks, please make sure that your peanut butter has no added sugar in it.
If you are not vegan you can use two eggs and omit the flaxseed and water ingredients. You can make your own peanut butter using this recipe or purchase low carb sugar free peanut butter online.
Ingredients needed to make a sugar free vegan peanut butter cookie.
- Flaxseed Meal- 1 ½ tablespoon.
- Water- 6 tablespoons. That is ¼ cup plus two tablespoons.
- Almond Flour- 1 ½ cups. AP flour is an alternative if you are okay with AP flour.
- Salt- ½ teaspoon
- Baking Powder- 2 teaspoons.
- Sugar Free Peanut Butter- 1 cup. Please make sure that it is vegan. Creamy or crunchy peanut butter should work in this recipe.
- Sugar Alternative- ⅓ cup. The alternative should be granular and can be baked with. This measurement works with monk fruit or stevia. Other alternatives should measure equal to a half cup of sugar.
- Coconut Oil-¼ cup at room temperature.
- Vanilla Extract- 1 teaspoon.
- Roasted Peanuts- ½ cup chopped. You can use less or omit this if you are using a chunky peanut butter.
How to make Vegan Keto Peanut Butter Cookies
- Preheat your oven to 325 and prep a cookie sheet for nonstick. I like to use parchment paper on a rimmed bakingor cookie sheet. You may need two sheet to bake these cookies as they spread.
- In a small bowl or cup, mix together the flaxseed meal with the water. Set this aside while you work.
- Next, in a small or medium sized bowl, use a fork or a whisk to mix together the almond flour, salt, and baking powder.
- Beat together the peanut butter, sugar alternative and the coconut oil until creamy. Then add the flaxseed and water from the first bowl, vanilla extract, and the dry ingredients from the second bowl and combine until just mixed. Fold in the chopped peanuts.
- To form these cookies, roll them into a ball and then press them into the prepped cookies sheet. You can use a fork to create the crisscross pattern that is common with peanut butter cookies. Leave room between cookies as they will spread while baking.
- Bake these cookie for 10 minutes for a soft cookie. Or, bake these cookies for up to 15 minutes or until they are golden brown in the edges for a more crisp cookie. Allow the cookies to cool on the baking sheet before transferring.
