Perhaps you have never thought about it before but, now that I have brought it up, it is worth pondering.
Well, there is a difference between a "macaroon" and a "macaron".
The biggest difference between the two may simply have to do with where they are from.
Macaron is a French version of this that is made with egg whites and almond meal.
This 'macaroon' however, is made with shredded coconut and has no almond meal in it at all.

- These macaroons will need to be baked before covering them with the chocolate. It is important that you allow them to cool when they are done baking and before transferring them off of the baking sheet.
- This recipe uses vanilla extract for additional flavor. Feel free to substitute in another flavor extract (such as banana or lemon for example) for your vanilla extract to change up the taste of your macaroons!
- The chocolate that is drizzled over these macaroons is a simple glaze that is also vegan. Feel free to omit this step if you do not want chocolate. However, you could also double it if you want even more chocolate.

The chocolate that is drizzled over these macaroons is a simple glaze that is also vegan. Feel free to omit this step if you do not want chocolate. However, you could also double it if you want even more chocolate.
Ingredients needed to make keto low carb macaroons.
- Shredded Unsweetened Coconut- 3 cups.
- Agave Nectar or Sugar Free Sweetener - ¼ cup.
- Coconut Extract- 1 teaspoon. Omit and add an extract teaspoon of vanilla if desired.
- Vanilla Extract- 1 teaspoon.
- Coconut Oil- 2 tablespoons.
- For the glaze- melted Coconut Oil- ½ cup, Unsweetened Cocoa Powder- ½ cup and Maple Syrup (sugar free or regular) ¼ cup.
How to make Keto Low Carb Chocolate and Vanilla Macaroons
- Preheat your oven to 350 and line a rimmed baking sheet or cookie sheet with parchment paper.
- Use a strong blender or food processor to blend together the shredded coconut, sweetener, extracts, and coconut oil. When you are able to form the ingredients into a shape, form 12-14 balls and set them on to the prepped baking sheet, pressing on the top for a macaroon shape.
- Bake the macaroons for 12-15 minutes or until the tops begin to brown. Allow the macaroons to cool before transferring them to a cooling rack.
- Meanwhile you can prepare the glaze. In a medium bowl, whisk the melted coconut oil with the unsweetened cocoa powder and syrup until combined. Then using a spoon or a small jar drizzle the mixture over the top of the macaroons. Let it cool for 20 minutes before serving.
