- Granular White Sugar Alternative - 1 cup. Use a sugar alternative that measures 1:1 with sugar for best results.
- Brown Sugar Alternative - ยฝ cup. Use granular that measures 1:1 with sugar in volume.
- Eggs- 2.
- Vanilla Extract- 1 teaspoon.
- Sugar Free Chocolate Chips- 1 cup.
- Optional- chopped nuts as desired.
How to make The Best Sugar Free Chocolate Chip Cookies
- Start by preheating your oven to 350 and prepping a cookie sheet for nonstick (I use parchment paper for an easy clean up).
- In a medium sized mixing bowl, whisk together the flour and baking soda. Set this bowl aside.
- Next, in a large mixing bowl, cream together the butter and the sugar alternatives. I use a paddle attachment and scrape the sides of the bowl as needed.
- For the next step we are going to add the dry ingredients from the first bowl to the ingredients in the second bowl. To do so, add half of the dry ingredients to the mixing bowl, stir gently and then add the remaining ingredients and stir gently again. Then add the eggs and the vanilla extract. Mix these ingredient until just blended, do not overmix!
- Lastly, fold in the chocolate chips. Bake your cookies for 10-12 minutes or until they begin to brown. Larger cookies will most likely take longer than smaller cookies to bake. Also, some folks prefer their cookies baked longer than others.

- 1 cup Splenda -see post for alternatives, use a granular sugar alternative that measures 1:1 with sugar and can be baked with.
- ยฝ cup Surkin Gold -see post for alternatives, use a brown sugar alternative that is granular, can be baked with, and measures 1:1 with sugar.
- 2 Eggs - room temperature
- 1 tsp Vanilla Extract
- 1 cup Sugar Free Chocolate Chips - see post for details
Instructions
- Start by preheating your oven to 350 and prepping a cookie sheet for nonstick.
- In a medium sized mixing bowl, use a fork or a whisk to mix together the flour and baking soda. Set this bowl aside. Next, in a large mixing bowl, cream together the butter and the sugar alternatives (white and brown alternatives).
- Stir in the dry ingredients from the medium mixing bowl (flour and baking soda) until just blended Then stir in the eggs and the vanilla extract. Do not over mix. Then fold in the chocolate chips.
- Bake your cookies for 10-12 minutes or until they begin to brown. Then allow them to cool on a baking rack.

I hear that agave nectar can be used in a 4:3 ratio (corn syrup to agave) equivalent. I have also seen sugar free substitutes. I have never used these as a substitute in a bar recipe such as scotcharoos. Hope this helps ๐

Hi- yes you are right that coconut sugar is indeed sugar. However, Coconut palm sugar is considered a healthier option for people with diabetes because it contains less pure fructose than other sweeteners.Some researchers say that it has a lower glycemic index which is why I use it. I made this recipe a few days ago. The texture of the dough, when raw, is just like regular chocolate chip cookies. That is difficult to achieve. After cooking, they were very dry, though I did not overcook them. What I disliked most is that they are barely sweet at all. I have been diabetic for 17 years, so I am used to the taste of sugar free desserts. These are difficult to enjoy as a dessert. Next time, I am going to try adding some agave nectar in hopes of them being sweeter and chewier. All in all, this is the best recipe I have tried yet. Achieving a good sugar free chocolate chip cookie is right up there with the elusive sugar free brownie worth eating. I appreciate this recipe though. Thank you!

Delicious! I doubled the Splenda and used 2 tablespoons of brown sugar since I didn't have coconut palm sugar on hand. I used a mixture of white whole wheat flour and oat flour to increase the fiber and make up for the real sugar. Texture was good, crumbly and a bit dry but that's to be expected with that flour combo. Thanks for the recipe! Hubby was thrilled to get real cookies fresh from the oven.
