Sugar Free Patriotic Fruit Popsicles

Equipment

Ingredients

  • ½ cup Blueberries
  • 3 tbsp Stevia - see post for alternatives
  • ½ cup Water -divided
  • 1 ½ cups Strawberries - see post for prep details
  • ¾ cup Coconut Cream - see post for alternatives

Instructions

  • Place your rinsed blueberries into the blender or processor along with one tablespoon of stevia and ¼ cup of water. Puree the ingredients until they are blended into a liquid. Then transfer the liquid into the prepared popsicle molds. Insert the popsicle sticks and freeze until firm (about three hours).

  • Repeat this process with the strawberries by processing them with ¼ cup of water and one tablespoon of the stevia. Pour this into the molds to make the second layer and freeze until firm.

  • For the final layer, whisk together the remaining ingredients (whipping cream and remaining stevia) and transfer it to the popsicle molds for the white and final layer. Freeze until solid and then enjoy them!.

Recipe Notes

This recipe calls for vegan heavy whipping cream.
I use coconut cream for this when I want something to be vegan.
 
Non vegan folks can use an alternative to the vegan heavy whipping cream.
Obviously, you can use heavy whipping cream that is not vegan.
Other alternatives that could work in this recipe include Greek Yogurt and whipping cream (less fat).
