In a large bowl, mix together the sugar and the pasteurized egg whites
Add ¼ teaspoon of water to the bowl and mix. Continue doing this until a paste forms
Divide the paste into alternative smaller bowls and stir in food coloring and extract to each bowl.
Transfer each of the colored pastes to it's own plastic baggie. Seal the baggie and then cut off a small corner (or larger if larger sprinkles are desired)
Pipe the paste from each bag on to parchment paper. Allow the paste to dry overnight. Cut into sprinkle shapes.
