Preheat your oven to 375 and prep your muffin pan for nonstick. This recipe makes about a dozen average sized muffins.
Sift or mix together the flour, ground cinnamon, and baking powder in a medium bowl. Set this bowl aside.
In a mixing bowl, mix together the butter and sugar alternative until somewhat creamy.
Stir the egg and the vanilla extract into the bowl.
Next, we will alternative adding the dry contents from the first bowl and the sour cream/yogurt. Add half of one, gently stir, and then half of the other and repeat.
Lastly, fold in your peaches. Bake these muffins for 25-30 minutes or until a toothpick comes out clean. Allow to cool on a rack.
