Sugar Free Vegan Banana Chocolate Chip Muffins

  • Preheat your oven to 350 and prep your muffin tin for nonstick or liners.

  • In a medium mixing bowl, use a fork or a whisk to mix together the flour and baking powder. Set this bowl aside.

  • Next, in a large mixing bowl, beat together the oil and the sugar alternative until creamy.

  • For the next step, we will add the flour mixture from the first bowl to the large mixing bowl, taking care to not over-mix. I suggest using a whisk or mixing by had and adding half of the dry mixture at a time, gently mixing between additions. Then mix in the milk alternative, vanilla extract, and bananas. Your batter should be somewhat lumpy thanks to the bananas. Lastly, use a rubber spatula to fold in the chocolate chips.

  • Fill your prepared cups ¾ of the way and bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool on a rack before frosting or storing.

Recipe Notes

As mentioned, using ripe bananas rather than older and softer bananas work best in this recipe.
Also, mentioned was that this recipe calls for sugar free chocolate chips and that you can find vegan sugar free chocolate chips here (please read the label to make sure that the chocolate chips do not have milk or similar products added).
 
Also mentioned, is that instead of butter, we will use vegetable oil for moisture.
You can find vegan milk substitutes (such as oat or nut milks) here. Instead of All Purpose Flour, make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe lower in carbohydrates by using low carb Carbalose flour.
