A delicious muffin idea for breakfast.
I could actually enjoy eating these muffins any time of the day as well.
This recipe is a lot like my Sugar Free Banana Chocolate Chip Muffin recipe.
Both recipe are for delicious muffins that are are also flavored with bananas.
However, this muffin recipe is vegan as there are no eggs or milk involved.
The big question here of course is what do bananas do in baking.
In the case of this vegan recipe, bananas are added as a substitute for eggs as an ingredient.
However, bananas are good for adding moisture to the muffins as well.
Here is how to use bananas in this muffin recipe.
First off, my thought would be to use up an older more ripe banana in this recipe.
However, a more ripe banana that has been mashed actually works better.
Here are some other vegan ingredient substitutions that we will use in this recipe.
This recipe calls for sugar free chocolate chips.

We will make more dairy substitutions as well.
Instead of butter, we will use vegetable oil for moisture.

- Always use fresh ingredients for the best results. This is especially true of leavening agents such as baking powder.
- Resist the urge to fill the muffin cups more than ¾ full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.
- Make your muffins more impressive by using an extra large muffin pan or extra small or mini muffin pan.
- Resist the urge to over-mix the batter when you have combined your ingredients. Over-mixing causes the muffin to lose air pockets and become hard. I like to blend in my dry ingredients just until they become mixed.

- Baking Powder- 1 tablespoon (yes, 1 tablespoon).
- Sugar Alternative- ½ cup. Please use a granular alternative that measures 1:1 with sugar for best results.
- Vegetable Oil- ⅓ cup.
- Vegan Milk Alternative- ⅓ cup. Nut milks or oat milk for example.
- Vanilla Extract- 1 teaspoon.
- Mashed Bananas- 1 ⅓ cups mashed. That should be about 3-4 bananas depending on the size. You can use a potato masher to mash your bananas.
- Sugar Free Chocolate Chips- 1 cup. Make sure that they are vegan by reading the label.I mentioned above about sugar free chocolate chips and that you can find vegan sugar free chocolate chips here (please read the label to make sure that the chocolate chips do not have milk or similar products added).
How to make Sugar Free Vegan Banana Chocolate Chip Muffins
- Preheat your oven to 350 and prep your muffin tin for nonstick or liners.
- In a medium mixing bowl, use a fork or a whisk to mix together the flour and baking powder. Set this bowl aside.
- Next, in a large mixing bowl, beat together the oil and the sugar alternative until creamy.
- For the next step, we will add the flour mixture from the first bowl to the large mixing bowl, taking care to not over-mix. I suggest using a whisk or mixing by had and adding half of the dry mixture at a time, gently mixing between additions. Then mix in the milk alternative, vanilla extract, and bananas. Your batter should be somewhat lumpy thanks to the bananas. Lastly, use a rubber spatula to fold in the chocolate chips.
- Fill your prepared cups ¾ of the way and bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool on a rack before frosting or storing.
