Ingredients

  • cup Flour.
  • 2 tsp Ground Cinnamon.
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda.
  • ½ cup Butter. --Softened to room temperature.
  • 3 tbsp Granular Sugar Alternative --Use sugar alternatives that measure like sugar and that can also be baked with for best results.
  • cup Brown Sugar Alternative. --Use sugar alternatives that measure like sugar and that can also be baked with for best results.
  • 1 Egg.
  • ½ cup Plain Yogurt.
  • tsp Pure Vanilla Extract
  • cups Apples. --Peeled with the core and seeds removed and then diced into around ¼ to ½" cubes. About 2 medium sized apples.

Instructions

  • Prepare. Preheat your oven to 375°F and prep a muffin pan for nonstick. Muffin liners work well in this recipe.
  • Streusel In a medium bowl, use a fork to combine together the flour, brown sugar, butter, and ground cinnamon, mixing until you get a crumbly texture. You can then set this bowl aside while you make the muffin batter.
  • Dry Ingredients. In a medium bowl, use a whisk to combine together your flour, ground cinnamon, baking powder, and baking soda.
  • Cream. In a large mixing bowl, beat together the softened butter and sugar alternatives until smooth and creamy (about two to three minutes).
  • Wet Ingredients. Scrape down the sides of the large mixing bowl and then add the egg, yogurt, and vanilla extract. Beat for a minute and a half on medium and then stop the mixer and scrape down the sides of the mixing bowl. Beat the ingredients for another minute and a half on medium.
  • Combine. Set the mixture to low speed and slowly add the dry ingredients from the first bowl to the large mixing bowl and mix the ingredients until just combined.
  • Fold. Use a rubber spatula or similar item to fold in the diced apple pieces.
  • Bake. Use a medium cookie scoop or similar item to evenly fill each the muffin cups ⅔rds full. Sprinkle the streusel topping, from the second step, over the tops of the muffins and then place the pan in the center of your oven and bake for 20-25 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.
  • Cool. Allow the muffins to cool in the pan for five minutes before transferring the muffins to a cooling rack to finish cooling.
