Instructions

  • Preheat your oven to 375 and prep a loaf or bread pan for nonstick.
  • In a medium bowl, use a whisk to combine together the flour, baking powder, and coconut flakes.
  • Next, in a large mixing bowl, beat together the mashed bananas and butter until combined. Then stir in the egg and vanilla extract .
  • Add the dry ingredients from the first bowl to the combined ingredients in the mixing bowl and mix until just combined.
  • Transfer the mixture to your prepared loaf pan and then spread the ingredients out evenly.
  • Bake for 40-45 or until a toothpick comes out clean from the center and the bread turns golden.
  • Allow the bread to cool for about ten minutes in the pan before transferring to a wire cooling rack and allowing to cool completely.
