  • Prepare. Preheat your oven to 350 and prep your muffin pan for nonstick. Muffin liners work well in a recipe such as this one.
  • Dry Ingredients. In a medium bowl, combine together your oats, baking soda, salt,and cinnamon.
  • Wet ingredients. Next, in a large mixing bowl, mix together the mashed bananas, milk, syrup, and eggs until combined. Then scrape down the sides of the mixing bowl.
  • Combine. Use a rubber spatula or similar item to gently mix in the dry ingredients, from the first bowl into the wet ingredients in the mixing bowl. Mix the ingredients until just combined, avoiding overmixing. Then gently scrape down the sides of the bowl again.
  • Fold. Lastly, use the rubber spatula to fold in the chocolate chips and chopped walnuts, again gently and avoiding over mixing the ingredients.
  • Transfer. Use a cookie scoop or similar item to scoop the batter into your prepared muffin cups, filling them about three quarters of the way full.
  • Bake. Bake your muffins for 15-20 minutes or until the tops are firm and begin to brown.
  • Cool. Let your muffins sit in the pan for 5 minutes before transferring them to cooling rack to fully cool.
