No Added Sugar No Bake Brownies,

Instructions

  • Prepare. Gather your ingredients and if you have not done so, remove the pits from your dates. Also, line a square (9x9") baking pan or dish with parchment paper that extends over the edges.
  • Process. Process together your walnuts ( 1 ¾ cups), unsweetened cocoa powder (½ cup) and salt until crumbly. Then add the dates, nut butter, and vanilla extract and pulse until the ingredients come together into a dough-like consistency.
  • Press. Transfer your ingredients from the food processor to your prepared baking pan. Then use your hands to press the ingredients in place. You can dampen your fingers if the ingredients get a bit sticky.
  • Double Boiler. In a double boiler, heat your coconut cream until melted. Then remove it from the heat.
  • Ganache. Use a whisk to blend your remaining cocoa powder and maple syrup with the melted coconut cream and then evenly spread the mixture over the ingredients that you pressed into the pan. Sprinkle the remaining walnuts on top of the ganache.
  • Set. Place your pan into your refrigerator for the brownies to set (about an hour to two hours). If you are in a hurry you can try placing the brownies into your freezer until set.
  • Serve. Once your brownies have set you can use the parchment paper to lift them out of the pan. Sprinkle the salt on top of the brownies and then slice and serve them.
