Preheat the waffle iron according to the directions. I suggest that you pretreat it with nonstick spray or a bit of higher heat oil spread on
In a small to medium mixing bowl, mix together the egg and the egg and the cheese. Then fold in the pepper and bacon. Season as desired.
Place ¼ cup (or as needed if you are not using a small waffle maker) of the mixture into the waffle maker. Cook for 2-3 minutes until the chaffle has browned and cooked through.
Transfer the chaffle to a plate and allow it to cool for a few minutes before serving. This batter should make two small waffle sized chaffles.
