Ingredients needed to make a Keto Low Carb Chaffle.
- Egg-1.
- Mozzarella Cheese- ½ cup. The mozzarella cheese should be grated. Yes, other cheeses could work in this recipe. Mozzarella is perhaps the easiest however.
- Jalapeno Pepper- ½. Your pepper should have the seeds removed should be diced.
- Bacon- 1 slice that has been cooked and allowed to get cool and hard. Chop the bacon up into pieces. Turkey bacon also works. You could also sub in cooked ham, pepperoni, or even salami that has been chopped up.
- Seasonings as desired .

- Preheat the waffle iron according to the directions. I suggest that you pretreat it with nonstick spray or a bit of oil spread on. Use a higher heat oil such as Peanut oil or canola oil.
- In a small to medium mixing bowl, mix together the egg and the egg and the cheese. Then fold in the pepper and bacon. Season as desired.
- Place ¼ cup (or as needed if you are not using a small waffle maker) of the mixture into the waffle maker. Cook for 2-3 minutes until the chaffle has browned and cooked through.
- Transfer the chaffle to a plate and allow it to cool for a few minutes before serving.
- This batter should make two small waffle sized chaffles.
