Sugar Free Low Carb Cinnamon Pretzels
This is an easy recipe for sweet pretzels without all of the carbohydrates in it.
You will be amazed at how much this pretzel smells and tastes like the popular mall pretzel!
This recipe for pretzels does remind me of my Low Carb Homemade Bagel recipe.
Both low carbohydrate bread recipes are based upon the popular 'fathead' dough recipe.
However, this recipe is for a cinnamon pretzel and not for a bagel, as much as I do enjoy bagels.

Everyone always wants to know how many carbs are in a soft baked pretzel.
The answer to this question has a lot to do with the kind of flour that is used in the recipe. What I mean is that the mall pretzel that is made with all-purpose flour can net out at over 60 grams of carbohydrates!
Why are we using almond flour instead of regular flour?
Almond flour is used in this recipe because it is friendlier to certain diets than regular wheat flour. Specifically, keto, low carb, and gluten-free diets.

Ground cinnamon is needed to give these pretzels that cinnamon flavor in this recipe. Also needed is a granular sugar alternative to make the cinnamon topping taste sweet.
Why do we add mozzarella cheese to this recipe?
This is a gluten-free bagel recipe. Because there is no added gluten, we need to add some kind of a binder to keep the ingredients together. So, as a result, we add mozzarella cheese. However, the dough will still be a bit sticky when we knead it.

- This dough will be more sticky than a normal dough that is used for making pretzels. Coating your hands with oil before you actually knead the dough can be helpful to you. The oil will help prevent the dough from sticking to your hands.
- Sometimes refrigerating the dough before you knead it can help.
Refrigerating the dough may help it be easier to work with. On the flip-side, heating the dough for a 10-15 seconds can help it become easier to work with too. - Sometimes, no matter what kind of dough you are using to make pretzels, the dough can break when you are rolling it or working with it to shape your pretzels. You can easily fix this by use a bit of water on your fingertips to work the pretzel dough back together.
These homemade pretzels will be baked in an oven.

Here are the ingredients that are needed to make these low carbohydrate keto an sugar free pretzels.
How to make Sugar Free Low Carb Cinnamon Pretzels
- Preheat your oven to 350. Prep your baking sheet or cookie sheet, I suggest using parchment paper. You may also want to coat the parchment paper with a bit of nonstick as well.
- In a medium mixing bowl use a whisk or a fork to mix together the almond flour and the baking powder. Set this bowl aside.
- Next, in a small mixing bowl use a fork or whisk to mix together the sugar alternative and the ground cinnamon. Set this bowl aside as well.
- In a saucepan on low- to medium heat, melt together the mozzarella cheese and cream cheese. Stir the mixture as it melts, scraping the bottom of the saucepan as needed. Once the mixture has melted together remove the saucepan from the heat and allow to cool for a minute or two at the most but, not totally. We will need the dough to be somewhat warm for best results. Alternatively, you can place these ingredients in a microwave safe bowl and microwave to melt, stopping to stir every 30 seconds.
- I suggest using a hook attachment and a stand mixer to make this recipe. Add the flour mixture to the mixing bowl and the melted cheese mixture. Mix this for 10 seconds and then add the eggs. Alternatively, you can mix these ingredients by hand. PLEASE NOTE THAT THIS DOUGH WILL NOT BE LIKE YOUR USUAL ALL PURPOSE FLOUR DOUGH. IT WILL BE STICKY.
- When the dough begins to stick together you can transfer it to a workspace to form the pretzels. We will be kneading the mixture next. It is best to rub some oil on your hands before kneading as this is a sticky dough by nature. Knead the dough for 5-10 minutes until you are able to form it somewhat. It will not be like regular dough in touch or texture.
- Divide the dough in half and then half again. You can continue to divide until you reach six to eight pieces in order to make six to eight pretzels. Form a snake-like roll about a foot long with each individual dough piece. Then twist the dough into the shape of a pretzel.
- Whisk together the cinnamon sugar alternative with the melted butter and then brush this over the pretzels. You can use any leftovers for brushing on or dipping the baked pretzels.
- Bake your pretzels for 15-20 minutes or until the brown to your liking. Allow the pretzels to cool on a rack. Brush additional cinnamon alternative butter on top before serving.
