This recipe is made with peanut butter and oatmeal that come together into something really yummy!
This cookie recipe is a lot like my popular No Bake Sugar Free Chocolate Cookies.
Both recipes are based upon the old fashion boiled cookie recipe which grandmothers have been making popular for years. However, this recipe comes without chocolate.

These peanut butter no-bake cookies can be made anywhere that you can melt your beginning ingredients.
Hence, this is a great recipe to take with you on the road or when you know there will be a microwave or a campfire.
I would think that this would be a great recipe for a barbecue or campfire as a result.
This recipe does not include eggs in it.
Eggs are what are used in baked cookies to help keep the cookies together.
Also missing from this recipe is flour really of any kind.

Here is the scoop. In a regular no bake recipe like this one, there is the sugar that is boiled. The hardening of the sugar is what helps to cause the cookies to harden when the sugar cools.
Since we are using sugar alternatives instead of sugar, the results may not be exactly the same as it would be if sugar had been used.
With a few adjustments in the recipe however, we can come close with this no-bake cookie recipe that does not have sugar in it. To help your cookies get harder be sure to use real butter, bring your boiling ingredients to a boil, and try refrigerating the cookies after you have placed them on the cookie sheet.

I just mentioned that the chemical reaction of sugar in the original recipe is what makes the cookies harden up perfectly. Since we are using sugar alternatives in this recipe, your cookies may not harden up exactly like the sugar version of this recipe.
Here are some helpful tips for your no bake cookies.
- Make your cookies even better tasting by adding sugar free chocolate chips or chopped nuts. Simply stir them in before you place your cookies onto the cookie sheet and when the batter has cooled a bit.
- If your cookies seem to have a hard time getting hard, try putting them into the refrigerator. These cookies can also be frozen.
- I am suggesting that you use parchment paper or wax paper to place your cookies on. Both of these choices make for an easier clean up. Even better, you can use the paper to transport and store your uneaten cookies.
Here is how to store these no bake cookies.
Once the cookies harden (45-50 minutes or so), you can transfer them to an air tight container. For best results, refrigerate them for up to a week or freeze them for three to four months.

Earlier I mentioned that this recipe is based upon the popular old fashion boiled cookie recipe. In that recipe, it is the chemical reaction of boiling the sugar that makes the cookies harden up perfectly. Since we are using sugar alternatives in this recipe, your cookies may not harden up exactly like the sugar version of this recipe.
Also mentioned is that you should use (creamy) sugar free peanut butter for this recipe.
Here is how to make your own sugar free peanut butter that you can use in this recipe. Or, you can purchase peanut butter that has not had sugar added to it.
The ingredients that you will need to make this Sugar Free No Bake Peanut Butter Cookies
- Sugar Free Peanut Butter- 1 cup, creamy works best. You can make your own sugar free peanut butter that you can use in this recipe. Or, you can purchase peanut butter that has not had sugar added to it.
- Oats- 3 cups of the quick oats.
- Butter- 1 stick or ½ cup. You can try a butter alternative however, I have not and can only assume that it would work in this recipe.
- Milk- ½ cup. Again, I have not tried this recipe with a nut milk however, I would guess that it would be fine to use.
- Sugar Alternative- 2 cups equivalent to sugar. Choose an alternative that can be heated such as Erythritol, Splenda, or even Stevia.
- Vanilla Extract- 1 teaspoon.
How to make Sugar Free No Bake Peanut Butter Cookies
- Prep a cookie sheet with parchment paper or wax paper. Set this aside.
- In a large mixing bowl, mix together the sugar free peanut butter and oats. Set this bowl aside.
- Next, in a saucepan over medium heat, bring to a boil the butter and the milk. Whisk or stir the ingredients as they heat up to prevent burning or sitcking. Tip: spray your saucepan with a bit of nonstick before you add the ingredients. After the mixture has boiled for one minute, turn the heat off. Remove the saucepan from the heat and stir in the sugar alternative and the vanilla extract.
- Pour half of the ingredients from the saucepan over the first bowl with the peanut butter and oatmeal and stir a few times. Then blend in the remaining contents from the saucepan with the ingredients from the bowl.
- When the ingredients seem to be holding together, use a scoop or a small spoon to scoop out the cookies and flatten or drop on to the prepared cookie sheet. This should be done quickly as the cookies will want to set as they cool. Then allow the cookies to cool and set entirely before serving.
