If you are like me then you may think of fudge as a kind of candy.
Maybe fudge is a a cross between candy and something baked that you may especially enjoy during the holiday season.

Technically, fudge is a candy made with sugar free powdered sugar and peanut butter.

We also add butter to this recipe to smoothen out the texture and the taste. However, adding other ingredients to fudge is certainly what makes it taste even better.

 

This fudge recipe is based upon recipes made with confectioners sugar.

However, we will be using sugar free confectioners sugar to make this recipe.
I refer to this as 'powdered sugar' by the way, as technically they are the same thing.

Finding sugar free powdered sugar is rather easy.

You can easily find sugar free powdered sugar online.

I just mentioned that you will need sugar free powdered sugar to make this fudge recipe.
You can find sugar free powdered sugar online or use this recipe for sugar free powdered sugar to make it yourself.

Here are some more helpful tips for you.

  1. Make sure that you are using sugar free peanut butter. You can find my recipe for homemade sugar free peanut butter here.
  2. Adding half cup of nuts or a bit of unsweetened cocoa powder can make this even better. You may need to adjust the other ingredients as needed.
  3. Make this fudge recipe vegan. Simply sub in a coconut oil for the butter. Note that you may need to make a few adjustments for the texture or flavor by using alternative ingredients.

 

People sometimes ask is peanut butter keto friendly.

I tell them as long as there is no added sugar in it, the peanut butter should be keto friendly. However, it is best to read that label on the packaging just to make sure, just like with everything else.

Also mentioned, you should use a peanut butter that is a sugar free keto friendly peanut butter.

Ingredients needed to make Ketol Sugar Free Peanut Butter Fudge.

 

  • Sugar Free Peanut Butter- 1 cup. You can find my recipe for homemade sugar free peanut butter here.
  • Butter- 1 cup, softened to room temperature. Vegan folks can sub in a coconut oil for the butter.
  • Sugar Free Powdered Sugar- 3- 3 ½ cups plus additional if needed. I have a recipe for sugar free powdered sugar that you can make for yourself.
  • Vanilla Extract - 1 teaspoon

How to make Low Carb Keto Peanut Butter Fudge

 

  • Prepare a square baking dish for nonstick. Some folks like to use butter however, I am a fan of parchment paper as it is useful throughout the process.
  • To microwave this recipe, combine together the peanut butter with the butter in microwave safe mixing bowl. Microwave on high stopping to stir every 30 seconds until the two ingredients are blended together smoothly. It should take about a minute and a half to do.
  • To make this recipe on the stove, over medium high heat, melt together the peanut butter and butter, stirring continuously, until blended smoothly.
  • Remove the blended butters from the heat and stir in the remaining ingredients. Then transfer to the prepped baking dish. Use the back of a buttered spatula if needed to press the fudge into place. Then allow the fudge to cool in the refrigerator for until firm (two to three hours) before cutting into servings.
