Ingredients needed to make Peanut Butter Coconut Bites.
- Sugar Free Peanut Butter- ½ cup. Please use creamy that is also keto friendly. You can make your own sugar free keto peanut butter by using this recipe here. However, you can use another sugar free nut butter such as this recipe for homemade sugar free almond butter.
- Sugar Free Maple Syrup- ¼ cup. Yes, this does exist! However, you could sub in honey or agave if preferred.
- Almond Flour - 1 cup. Blanched works well. Also, please make sure that your product is 100% almond flour and not a blend.
- Flaxseed - 1 tablespoon (adds protein and texture). Feel free to use chia seeds instead.
- Vanilla Extract- 1 teaspoon.
- Shredded Coconut- ½ cup, divided, or as needed.
How to make Keto Low Carb Peanut Butter Coconut Bites.
- In a medium mixing bowl, blend together the peanut butter and the syrup.
- Next, in a large mixing bowl, mix together the almond flour, flaxseed, and a quarter cup of the coconut.
- Add the peanut butter and syrup mixture from the first bowl to the larger mixing bowl and then stir in the vanilla extract and blend the ingredients until they are well mixed. Refrigerate for 10-15 minutes to allow the ingredients to get hard enough to work with. You can skip this step if desired.
- Roll the mixture into individual balls, roll in the remaining coconut, and then place on a rimmed pan. Refrigerate until firm, about 20 minutes.
- You can store these bites covered in the refrigerator for up to two weeks. However,they will also freeze for about three to four months.

- 1 tsp Vanilla Extract
- ½ cup Shredded Coconut
Instructions
- In a medium mixing bowl, blend together the peanut butter and the syrup.
