The recipe for Sugar Free Low Carb Chocolate Turtles
What you will need to make this
As mentioned, you will need sugar free caramels. You can find sugar free caramels online here, here or here for example. I also have a sugar free caramel sauce recipe here which could possibly used if you were to cut some of the liquid out to make it thick enough to use.
Also, you may need these ingredients.
An option for these these turtle candies is to make them on top of a square pretzel. The pretzel will not only give a base for this candy, it will also give a nice salty-crunch taste. You can omit the pretzel idea if you are going keto or low carb.
Ingredients Needed.
- Square Pretzels- 12-13 depending on number of caramels used. Most square pretzels have about 1 net carb in them. Omit this if you do not want that carb or if your pretzels's carb count is unsatisfactory for you.
- Pecan Halves- 1 cup. Purchase toasted pecan halves or toast them yourself in a 320 oven for 5-7 minutes.
- Sugar Free Chocolate Chips- 1 cup. While you are waiting for the caramel to solidify in the steps below, you can melt your chocolate. Melt your chocolate chips in double boiler or microwave oven. I use a microwave safe bowl/cup and microwave stopping every 30 seconds to stir until melted. Use simmering water for the double boiler method, stirring continuously as needed.
- Water- 1 tablespoon.
- Butter- ¼ cup melted.
- Sugar Free Caramels- 12-13 depending on size.
How to make Sugar Free Low Carb Chocolate Turtles
- Line a baking sheet or work space with parchment paper or buttered/ pre treated for nonstick foil.
- Arrange each pretzel on the prepared area from the last step, leaving ample room between them. Then arrange the pecans on top.
- In a saucepan over medium-low heat, combine together the water, butter, and caramels. Slowly melt the ingredients together, stirring constantly. Then use a teaspoon to place a drop of the melted caramel over each prepared turtle. Allow this to cool a bit before proceeding. This is a good time to melt your chocolate.
- Use a spoon to drop chocolate over the turtles. When this has cooled you can drizzle additional caramel over the turtles and decorate as desired.
- Allow the turtles to set. You can refrigerate them once cooled to room temperature for at least an hour.
