You may be wondering what is a pound cake and how did it get its name.
There is a reasoning behind the name of this buttery tasting cake.
You may already know that it has been around for a while too.
Pound cake got its name from 'a pound'.
That is, there are four basic ingredients in a pound cake and each of those ingredients weighed a pound.
Those ingredients include flour (one pound), butter (one pound), sugar (one pound), and eggs (one pound).
This cake recipe is especially for anyone asking how do I bake a cake in an air fryer.
While you would most likely prefer to bake a cake in a regular oven, there may be occasions when you would want to try an alternative method of baking. Perhaps you are traveling in an RV and do not have an over, do not have room in your oven (Thanksgiving and holidays!), or simply want to make a small cake for two.

Here are some tips for making a cake in an air fryer.
As I just mentioned, you can find a cake pan to fit your air fryer here. Depending on the size of your air fryer, you can find a variety of sizes of cake pans to choose from.
Here are some more helpful tips.
- Please use a granular sugar alternative that measures 1:1 with sugar for best results. Using a sugar alternative that is blended with sugar may result in a more moist of a cake. However, that would also mean that the cake will be low in sugar rather than having no sugar.
- This is one of those cake recipes that may work best when the cake pan is really prepped well. One idea is to use two of the following popular methods. Greasing the pan, flouring the pan or using pre-cut parchment paper.
- Lastly, like I usually mention with a recipe that includes a batter such as this one, please avoid over mixing as this will make the cake harder to chew thanks to the gluten. Also, avoid filling the cake pan more than half way full as the cake will expand while baking.
This pound cake recipe is based upon the classic recipe for pound cake.
Because we are using a sugar alternative to sweeten it, depending on the sweetener that you use, the cake may turn out a bit dry.
If you would like to prevent this from happening, feel free to add a tablespoon extra of the butter or a tablespoon of oil.

The ingredients needed for sugar free pound cake.
- Flour- 1 ¾ cups (AP). I have not tried this with a gluten free all purpose or keto/low carb all purpose flour. If you want to use one of these please read the label to assure that it measures 1:1 with flour, can be used in baking, and that the gluten free flour needs as for a binder.
- Baking Powder- ½ teaspoon.
- Butter- 2 sticks (½ cup ). The butter should be at room temperature.
- Granular Sugar Alternative- 1 cup + 2 tablespoons . Please use a granular sugar alternative that measures 1:1 with sugar and that can be baked with for best results.
- Eggs- 4 large at room temperature. This should also be about ½ pound in weight.
- Vanilla Extract- ½ teaspoon.
How to make Sugar Free Air Fried Pound Cake
- Preheat your air fryer to 350. Prep the cake pan useing preferably two of these methods- greasing the pan, flouring the pan or using pre-cut parchment paper.
- In a mixing bowl, use a sifter or whisk to mix together the flour and the baking powder.
- Next, in a different mixing bowl, cream together the butter with the sugar alternative.
- Add the eggs one at a time, stirring gently between the additions. Then add the vanilla extract.
- For the next step we will add the flour mixture from the first bowl to the mixing bowl. Stir this until just combined. If it seems too thick, add a teaspoon or as needed of heavy whipping cream or similar dairy.
- Transfer the batter into the prepped cake pan until it is about ½ to ⅔ full. Yes, you may have leftover batter depending on the size of your pan. Lower the pan into your air fryer (you may need to use the basket or make a sling using foil depending on your pan and air fryer). Bake the cake for 15-20 minutes or until a toothpick in the center comes out clean. Baking time will vary depending on the size of your air fryer.Use precautions when removing the cake pan as it will most likely be hot.
- Allow the cake to cool before removing it from the pan.
