Tips for making this sugar free cake.
My cake was made using a bundt pan which gives the finished cake a nice dimension. You can use the cake pan of your choice however, you may need to make adjustments in the baking time as a result.
More helpful tips for you.
- Bundt cake pans generally need extra prep for nonstick because they have angles and crevices in them. I like to spray mine with nonstick and then add a quick dusting of flour on top to help prevent sticking.
- Make sure that you are using a very ripe banana for this recipe. Using a banana that is soft, will make it easier the blend the ingredients more successfully.
- Many of my recipes also include options for low carbohydrate versions. Since this recipe depends on the bananas for both flavor and texture, and bananas have carbohydrates (about 24 net), I am not including a low carbohydrate alternative in this recipe.
- I love this idea of adding chopped nuts to this recipe either in the cake or on top of the glaze. Pecans or walnuts would work great if you decide to try doing this.
How to store leftover banana cake.
Leftover cake can be covered or stored in a cake storage container. If properly stored and refrigerated, it should keep for about five days.

- Preheat your oven to 325 and generously prepare the pan for nonstick.
- Start by making the crumble as this will be added to the cake pan before the other ingredients. Simply combine the crumble ingredients together in a medium bowl and work them into a crumble texture. Then evenly spread this over the inside of the pan.
- For the cake batter, in a medium bowl, use a whisk to combine together the flour, baking powder, baking soda, and cinnamon.
- Next, in a large mixing bowl, beat together the softened butter with the sugar alternative until creamy and fluffy. Then beat in the mashed bananas.
- Add the eggs the mixing bowl along with the vanilla extract and the sour cream and mix until incorporated. Then add the dry ingredients from the first bowl to the mixing bowl and mix until just incorporated.
- Next, in a medium bowl, blend together the filling ingredients (brown sugar alternative, cinnamon, and flour).
- Now, we will layer the cake ingredients for baking. Pour half of the cake batter from the large mixing bowl into the prepped pan. Then top this layer with the filling layer from the medium bowl. Lastly, cover the filling layer with the remaining batter from the large mixing bowl.
- Bake the cake for 55-60 minutes or until a toothpick comes out clean. Remove the cake from the oven and let it sit at room temperature for ten minutes. Then, place a plate on top of the cake and flip the cake over to release it from the pan. Let the cake sit for another 20 minutes to cool down before adding the glaze.
- For the glaze, simply combine the remaining ingredients together and pour the glaze over the cake.
EXPERT TIP👉 Double the amount of glaze that you make and then poke holes in the cake using a skewer or similar object. When you pour the glaze over the cake the glaze will fill the holes giving the cake extra flavor!
