- Sugar Free Chocolate Cake Mix. Use a 15-16 ounce box to keep the balance of the ingredients. You will not need the ingredients that are needed to actually make the cake however.
- Oil. Neutral oil such as vegetable oil work best in this recipe.
- Eggs. Your eggs should be at room temperature.
- Vanilla Extract. Added for flavor balance.
- Sugar Free Chocolate Chips. You use additional chocolate chips to decorate your warm just out of the oven cookies as well.
How to make Sugar Free Chocolate Cake Mix Cookies.
Yield: 2 dozen cookies
Prep time: 10 minutes
Bake time: 10 minutes
- Preheat your oven to 325. Prepare your baking pans for nonstick. I like to use parchment paper for a recipe such as this one.
- Place the cake mix in a large mixing bowl and use a whisk or fork to break up any lumps.
- Add the oil to the mixing bowl and blend until creamy. The add the eggs and vanilla extract and mix until just combined.
- Lastly, fold in the chocolate chips.
- Use a cookie scoop to scoop out the dough and place the cookies at least an inch and a half apart.
- Bake the cookies for five minutes and then rotate the baking sheets and continue to bake until the edges of your cookies are crisp (about 12-15 minutes total).
- Remove the cookies from the oven and press in additional chocolate chips to the tops of the cookies as desired.
- Allow the cookies to set on the baking sheet for about five minutes before transferring them to a wire rack to finish cooling.
