    This is a simple recipe for making homemade crackers that are shaped like goldfish.

    Real cheddar cheese is used in this recipe for flavor, texture, and color.

    I am personally not a tolerant person when it comes to crackers that are not crisp (yuck!). However, things do happen and crackers can lose their crunch.

    Proper baking and storing are the easiest ways to insure that your crackers are crisp as moisture can be the enemy to crisp crackers. Also important, in this recipe especially, is to use real butter that is also cold (think pie crust here!).

    How do you make keto low carb goldfish crackers?

    This is a copycat version of a popular bite sized cracker that many of us grew up eating. However, unlike the inspiring recipe, this recipe is keto low carbohydrate diet friendly.

    Instead of using the all purpose flour that is used in making crackers, this recipe uses a low carbohydrate almond flour. The other added ingredients (cheese, butter, etc) are also low in carbohydrates or carbohydrate free.

    Tips for making homemade crackers.

    This recipe works best using a full fat cheddar cheese. You can use a sharp or extra sharp variety however for more flavor.

    1. If your dough sticks to the cutter, try spraying a bit of nonstick on the cutter. Cutting the crackers can take a bit of time (using a multi cutter helps here).
    2. Personalizing your crackers with seasoning can make them taste even better. Taco, Bacon, or Italian seasonings are ideas.
    3. Lastly, while my crackers are in the shape of a goldfish, you can use another shape for variety. You can find ideas for small cutters here.

    How to store homemade crackers.

    These crackers should be stored in an airtight container. While they should keep for up to five days, you can try baking them for a few minutes as needed to crispin them up.

    This is a simple recipe for homemade crackers that is based upon a popular snack.
    We will first make the dough for this recipe and then cut out the fish shapes before baking them.

     
    This recipe is a low carbohydrate recipe as well.

    Instead of regular flour, we are using almond flour. Also, we are using cheddar cheese for flavor and structure of the crackers.

    Ingredients needed to make keto cheddar goldfish crackers.

    • Cheddar Cheese. You can use regular, sharp or extra sharp as desired. The cheese should be shredded.
    • Almond Flour. Use almond flour rather than almond meal for best results.
    • Xanthan Gum. Added to help hold the ingredients together as there is no added gluten.
    • Seasonings- such as paprika, onion powder, garlic powder, and salt. (one to two teaspoons total).
    • Butter. Cold butter is used to make the crackers cripier.
    • Water. Use to thin out the dough so that we can work with it.

    Freeze time: 15 min
    Bake: 12-15 min
    Total: 60 min

    How to make this recipe for Keto Cheddar Goldfish Crackers Recipe.

    • Place your shredded cheese, almond flour, xanthan gum, seasonings, and butter in a food processor and process until a dough forms. You can add up to a tablespoon of cold water to thin out the dough as needed.
    • Wrap the dough in plastic wrap and freeze for 15 minutes.
    • Preheat your oven to 350 and line two rimmed baking sheets with parchment paper.
    • Divide the dough in half and roll out the first half on a clean surface or parchment paper or a mat that can be used to transfer the crackers to the baking sheet for baking. Then cut out the shapes.
    • Bake the crackers for 12- 15 minutes or until crisp and golden. Meanwhile, repeat this process with the second baking sheet using the remaining dough.
    • Allow the crackers to cool for at least 15 minutes before enjoying.
