This is a chocolaty cookie that has plenty of flavor in it.
It just takes a few minutes to make this recipe too!

This no bake chocolate cookie recipe does not have oatmeal in it and is a better option for people watching their carbohydrates as a result

While these cookies are 'no bake' they are indeed cookies.
The ingredients that are in these cookies allow them to harden to a cookie form just like regular baked cookies.
There is a reason why most cookies that are baked are baked.
This reason is that those cookies are made with raw eggs and other ingredients that should no be consumed raw.
These no bake cookies do not contain raw eggs, or those other ingredients, and thus, can be eaten without being baked.
These no bake chocolate cookies can also be made vegan.
This is an eggless cookie recipe.
However, it does contain the egg substitute of flaxseed and water.
This recipe is eggless to avoid the raw eggs.
To make this cookie recipe fully vegan, simply substitute a vegan butter for the butter.
Vegan butter is is preferred to other butter alternatives for consistency of this cookies.
Here are some tips for making no bake cookies.
The butter in these cookies adds softness to the texture of the cookies. You could use an alternative such as coconut butter however, the cookies will become more chewy (similar to protein balls) as a result.
Here are some more helpful tips for you.
- You can use oats instead of the coconut in this recipe if you are not concerned about the carbohydrates. Your cookie will be a bit more chewy if you choose to do so.
- Pecans are added to this recipe for both flavor and crunch. Feel free to replace the pecans with other nuts or even dehydrated fruit if desired.
- The texture of these cookies will get more fudge-like with time. This is because of the coconut and pecans. Feel free to adjust the added sweetener as needed.
How to store no bake chocolate cookies.
These cookies should be stored in an air tight container.
If properly stored, these cookies should last for about a week.

About these Keto No-Bake Cookies
This is a no-bake chocolate cookie recipe that has no added sugar.
I am using granulated erythritol to sweeten these cookies however, you can use the granular sugar alternative of your choice.
This is also an eggless recipe because it is not baked.
Instead of eggs we will use the vegan alternative of flaxseed and water.
It is a good idea to make this egg before doing anything else as it will need about 15 minutes to sit before using.
Ingredients needed to make these Chocolate Cookies
- Flaxseed (½ tablespoon) + Water (1 tablespoon).
- Peanut Butter- ¾ cup, unsweetened preferred.
- Unsweetened Cocoa Powder- 1 tablespoon.
- Butter- 2 tablespoons.
- Granulated Erythritol- 2 tablespoons or as needed.
- Shredded Coconut- 1 cup, unsweetened preferred.
- Pecans- ½ cup, chopped.
How to make Keto No Bake Chocolate Cookies
- If you have not done so, prepare the flaxseed egg by mixing the flaxseed with the water in a small bowl. Set this bowl aside. This should sit until thickened. Also, line a baking sheet that can fit into a refrigerator (or two) with parchment paper.
- In a mixing bowl, combine together the peanut butter and the unsweetened cocoa powder.
- Next, in a microwave safe bowl, melt the butter. Then use a fork or whisk to blend the sweetener with the melted butter. Once blended, combine this with the peanut butter and the cocoa powder in the mixing bowl. Then stir in the flaxseed egg followed by the coconut and pecans.
- Use a cookie scoop to scoop out individual cookies, rolling the cookies into ball and then flattening each ball onto the prepared baking sheet.
- Refrigerate the cookies until hard (about 45 minutes).
