Sugar Free Lofthouse cookies ingredients
- Cake Flour- 2 ¼ cups.
- Baking Powder- 2 teaspoons.
- Salt- ½ teaspoon.
- Butter- ½ cup, softened to room temperature.
- Cream Cheese- 3 ounces, softened to room temperature.
- Granular Sugar Alternative- ¾ cup. Please use a granular sugar alternative that measures 1:1 with sugar and can be baked with.
- Eggs- 2, at room temperature.
- Vanilla Extract- 2 teaspoons.
- Sugar Free Frosting.
- Sugar Free Sprinkles.
How to make this sugar free Lofthouse cookies recipe.
- Use a whisk or sifter to combine together the cake flour, baking powder, and salt. Set this aside.
- Next, in a mixer, cream together the butter, cream cheese and sugar alternative. Then add the eggs and vanilla extract. Then add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Wrap the cookie dough in plastic wrap and place it into the refrigerator for at least 30 minutes.
- Preheat the oven to 350 and prep two cookie sheets with parchment paper. Use a scoop to scoop out the cookies and place them onto the cookie sheets. Flatten the cookies before baking. Bake the cookies for 12-14 minutes. They will not change color and will probably be a bit soft in the center when you remove them from the oven. Allow the cookies to cool on the cookie sheets.
- When the cookies have fully cooled, you can remove them from the cookie sheets, frost them, and add the sugar free sprinkles.
