- Eggs- 3. The eggs should be at room temperature.
- Milk- ¼ cup. While whole milk works best, you can use an unsweetened nut milk instead.
- Pumpkin Puree- ¼ cup.
- Sugar Alternative- up to 2 tablespoons or as needed, granular.
- Pumpkin Pie Spice- 1 teaspoon.
- Butter- 2 tablespoons or as needed for skillet/griddle prep.
- Bread- 1 loaf or as needed.
How to make this recipe.
- In a large bowl, whisk together the eggs, milk, pumpkin puree, sugar alternative, and pumpkin pie spice until smooth. Transfer this to a shallow bowl or casserole dish for dipping the bread into.
- Preheat your skillet on medium heat with a half tablespoon of the butter, spreading the butter around as needed to cover the skillet as it melts. You can add additional butter as needed. Meanwhile, place a slice or two if it fits, into the batter that you have made. Be sure to flip the bread to cover it on both sides.
- When the butter has melted and the skillet is warm, pick up each slice of bread, allow the excess batter to drip back into the bowl, and place the bread on to the skillet. Place fresh slice(s) into the batter while your toast is cooking.
- Cook the French toast for about two minutes or until the French toast is golden brown. Flip it to the opposite side and cook for another minute or two or until done.
Repeat with the remaining slices of bread. - This French toast can be kept warm on a wire rack in a 225 F oven for up to 30 minutes. Store any leftover French toast in an airtight container in the fridge for up to two days.
