This recipe is for anyone looking for a simple French toast casserole.
Possibly the best reason to make this recipe is for the convenience.
This recipe for French Toast Casserole can be made in advance, stored in the refrigerator over night, and then baked up when you need it to be baked!
French Toast Casserole is kind of like a custard covered baked bread.
That is, to make this casserole you basically need to cover the bread used with the egg dairy and seasoning mixture to bake. While you do not have to allow the bread to soak in the mixture for a period of time, allowing it to do so up to overnight, makes the casserole taste even better.
Here is how to make this a keto low carb baked French toast casserole.
This recipe already is sugar free. However, it still has some carbohydrates in it thanks to the bread that is used.
Making this a sugar free and keto recipe is simple.
First off, you will need to use a low carb keto friendly bread that is toasted or allowed to get stale. Also, for the milk dairy option, use the heavy cream and not milk.
Here are some tips for making this French toast casserole recipe.
The best kind of bread to use is a sturdy bread that will hold together when soaked in the mixture. I like a toasted Challah, brioche or crusty sourdough or French bread in this recipe.
Here are some more helpful tips.
- Tearing the bread by hand into bite sized pieces is perhaps the optimal way to make this. The torn pieces give a nice visual element to the French toast and allow for better absorption of the ingredients.
- The added fruit is optional. When selecting a fruit, use bite sized fruit such as sliced strawberries or blueberries.
- Personalize your baked French toast casserole by adding a topping before you serve it. You can use sugar free powdered sugar or a sugar free pancake syrup to do so.
People who have made this sometimes ask why is my French toast casserole soggy.
Simply stated, about anything that is baked, that is not suppose to be soggy, becomes soggy because it has too much liquid in it and/or it has not been baked correctly. For best results, follow the instructions and ingredient portions provided.

Ingredients needed to make Sugar Free French Toast Bake.
- Bread- 1 pound loaf. Suitable bread choices include toasted or stale Challah or brioche or you can use a crusty sourdough or French bread. Keto low carb if used, should be toasted or allowed to sit out to get hard.
- Eggs- 8. Your eggs should be allowed to get to room temperature before adding them to this recipe for best results.
- Milk- 1 ½ cups. Unsweetened nut milk can be used. I would use 1 cup of a nut milk and then add the extra ½ cup to the next ingredient to balance out the texture.
- Heavy Cream- 1 ½ cups. Alternatives include half and half or whole milk.
- Vanilla Extract- 2 teaspoons.
- Cinnamon- 1 teaspoon. Please use ground cinnamon and not cinnamon sugar.
- Brown Sugar Alternative- ½ cup.
