    Ingredients needed to make this low carb bread recipe.

    • Almond Meal. This is basically raw almonds with skin ground up into a meal. Almond meal is not the same as almond flour.
    • Psyllium husk and flaxseed meal are both added to aid in the hearty texture.
    • Baking Soda. Used instead of yeast for leavening.
    • Eggs. Added for moisture and to bind the ingredients together. Your eggs should be lightly beaten.
    • Water. Used for additional moisture.
    • Apple Cider Vinegar This helps the baking soda work as well as adding a bit of flavor to the bread.
    • Seeds. Used for the topping to make this bread even more 'rustic'. Sesame seeds were used to make my bread.

    Expert Tip ๐Ÿ‘‰ For the topping, you can different seeds like chia or sunflower seeds with or instead of the sesame seeds.

    How to make this Easy Low Carb Rustic Quick Bread Recipe

    Prep Time: 15 minutes.
    Bake Time: 40 minutes.
    Servings: 10

    1. Preheat your oven to 350 and prep a rimmed baking sheet for nonstick. I like to use parchment paper or a baking mat for a recipe such as this one.
    2. In a large mixing bowl, use a whisk to combine together the almond meal, psyllium husk, flaxseed meal, and baking soda. Then use a spoon or similar utensil to make a well in the center of the mixture.
    3. Next, in another bowl, use a clean whisk or fork to mix together the eggs, water, and vinegar. Once combined, pour these wet ingredients into the well that you made in the dry ingredients in the large mixing bowl. Mix the ingredients until just combined and then let the ingredients sit for five minutes for the water to absorb into the dry ingredients (flaxseed).
    4. To shape the bread dough first transfer the dough from the large mixing bowl to the prepared baking sheet. Use your hands to shape the dough into shape (round). Then use a knife to score the top of the bread with an "X".
    5. Top the bread with the seeds and then bake the bread for 35-40 minutes or until it appears to be crusty and browned.
    6. Let the bread sit on the baking sheet for five minutes before transferring to a wire rack to fully cool.

    Expert Tip๐Ÿ‘‰ This bread can be frozen. Once it has been fully cooled and sliced, simple wrap it in foil or freezer safe wrap for up to three months. When you are ready to enjoy this bread, allow it to thaw to room temperature.

    Tips for making the best rustic quick bread.

    Almond meal is used in this recipe for fiber, flavor, protein, and density. While you could use almond flour, they are different in consistency and as a result, your bread will not have the hearty texture and flavor that makes this bread so good.

    1. Eggs are used in this recipe. For optimal blending, your eggs should be at room temperature.
    2. When combining the wet and dry ingredients together, mix them until just combined. This will help keep your bread hearty with a texture that is expected from a rustic style bread.
    3. The beauty of rustic bread is that is does not require a loaf or similar pan for baking. Instead, you will need to shape the bread with your hands. If your dough seems to be sticking to your hands, simply wet your hands with water.

    How to serve keto rustic bread.

    • Serve this bread as is with a glass of almond milk or cup of coffee on the side.

    Leftover bread should be stored in an airtight container or sealed bag. When properly stored and refrigerated, this bread should keep for about a week.
