More helpful tips for you.
- Using fresh ingredients is essential to the success of this recipe. This is especially true when it comes to the baking powder used in this recipe.
- Cook these pancakes on a pre-warmed skillet or griddle. The heat should be set to medium for best results.
- Using vegetable or canola oil is recommended when preheating your skillet or griddle. The problem with using butter is that the butter tends to burn too quickly. Save the butter for topping your warm pancakes with before you eat them.
Perhaps the biggest question is how to serve your pancakes.
Sugar free pancake syrup is very popular at my restaurant. Having said that I must confess that I am also a fan of fresh fruit and perhaps some whipped cream or sugar free powdered sugar on top.

The recipe for Easy Low Carb Keto Pancakes
As mentioned, we will be using almond flour which is also gluten free and vegan to make these pancakes. However,to make these fully vegan, you can also use a vegan egg substitute as well as a nut milk such as almond milk.
Also we will still get to make these pancakes fluffy despite the lack of gluten from the flour.
Pancakes get fluffy thanks to the air that gets into them when we mix them up. Certainly, gluten can help hold on to the air in pancakes. However, we will be using baking powder to help us make our pancakes airy and fluffy!
What you need to make low carb, keto, gluten free, and sugar free pancakes.
- Oil or what you usually use to pre-treat your griddle for nonstick. I like canola oil for a recipe like this one.
- Almond Flour- 1 cup. Look for the blanched and super fine variety of almond flour.
- Baking Powder - 1 ½ teaspoons. You can find vegan and gluten free baking powders here.
- Salt- dash as needed.
- Sugar Alternative- 1 tablespoon equivalent to sugar. I like a granular alternative for this recipe. Use a granular sugar alternative that can be cooked with.
- Almond Milk - ¼ cup. Feel free to sub in another kind of milk or nut milk or even water.
- Eggs- 2 whipped. Vegan folks can use a vegan egg substitute that equals two eggs.
- Vanilla Extract- 1 teaspoon. Can use another extract or omit.
How to make Easy Low Carb Keto Pancakes
- Preheat your griddle or skillet on medium heat after prepping it for nonstick using your preferred method. Oil works best in this recipe. Use enough to coat the pan.
- In a medium bowl, whisk together the flour, baking powder, salt and granular sugar alternative. Set this aside for a moment while you work.
- Now in another bowl, beat or whisk together the milk, eggs and vanilla extract.
- Combine together the ingredients in either of the bowls and mix until smooth (chunk free) without over mixing.
- Use a large spoon or similar sized object to drop dollops (depending on your preferred pancake size of course) of batter on to the skillet/griddle. When the edges begin to brown flip the pancakes over and continue to cook until done. Serve warm.
