How to Make Low Carb Sugar Free Pancakes
When you are following a low carbohydrate or keto diet, the idea of eating pancakes seems like a treat.
A treat that you may think would be a big no-no thanks to the carbohydrate factor.
However, it is possible to enjoy low carb pancakes even when you are watching your carb intake.
By the way, these pancakes are sugar free as well. Following this recipe and making average sized pancakes will net you between 2-3 carbs, depending on the ingredients that are used.
There is a secret ingredients in this recipe.
This recipe calls for Carbquik. It is a low carb baking mix that I use often in my recipes.

The recipe for How to Make Low Carb Sugar Free Pancakes
As mentioned, this recipe calls for Carbquik. It is a low carb baking mix that I use often in my recipes.
You can take these pancakes to the next level by adding a cup of sugar free chocolate chips such as these. Top you pancakes with a low carb syrup such as this one carb syrup option or one of these sugar free and low carb syrups.
What you will need to make this
- Carbquik baking mix- 2 cups.
- Sugar Alternative- equivalent to 1 tablespoon of sugar. I use granular that has zero carbs in it.
- Half and Half- ¾ cup. Can sub in ½ cup of water plus 1 ½ tablespoons. However, using water may lead to a thinner batter that may not look as good as the half and half. Water is zero carbs and calories however.
- Heavy Cream- â…›th of a cup. If you were to sub in Greek Yogurt or another dairy for this then you would need to add some fat. So, for example, 1 tablespoon of Greek Yogurt Plus 1 tablespoon of whole milk.
- Melted Butter- ½ cup (1 stick).
- Vanilla Extract- 1 teaspoon.
- Egg- 1 beaten.
- Water- 1 ½-2 tablespoons. This batter is normally a bit thicker than regular pancake batter. Depending on how thick you want your pancakes, add the water amount that works best for you.
- Optional: sugar free chocolate chips such as these. - 1 cup.
How to Make Low Carb Sugar Free Pancakes
- Pre-treat your skillet or pan for nonstick. A baking spray works great. Preheat that pan for medium- medium high heat.
- Meanwhile, in a mixing bowl, combine together the Carbquik and the sugar alternative.
- In another bowl, mix together the half and half, heavy cream, melted butter, and vanilla extract.
- Slowly add the wet ingredients from the second bowl to the first bowl. I do this by adding half of the wet ingredients, stirring a bit, and then I add the remaining wet ingredients.Stir in the beaten egg.
- Then stir in the remaining water. Add the first 1 ½ tablespoons and then if the batter seems too thick, stir in the remaining water. Please note, this batter will be thicker than the normal pancake batter that you may be use to.
- If you are adding chocolate chips, then stir those in now.
- Cook these pancakes like you would cook regular pancakes. Ladle or spoon the batter on to the preheated skillet or pan. When the batter begins to bubble, simply flip the pancake over and cook until done.
What to put on top of your pancakes.
You could certainly enjoy these pancakes with a bit of butter on top.
