It is much easier to do so than I would have thought.

This recipe for sugar free jam is for everyone, like me, who enjoys the summer fruit abundance and wants to make it all last longer as a result.
I must say, enjoying fresh fruit during the summer is something that many people enjoy doing as well.
 

I originally posted this as preserving fruit with Splenda
However, it seems as if since I originally posted this recipe there have been some updates in the world of sugar alternatives.
As a result, I am making this recipe idea even better.

 

It is true that strawberries do come with their own natural sugar.

Hence, this recipe cannot be made totally sugar free. But, I must tell you that strawberries have the least amount of sugar when compared to other fruit out there.

There really is not a lot of sugar in strawberries as a whole.
Each individual strawberry has about half of a gram of sugar and about half a gram of net carbohydrates in it.
That is not bad if you were to as me as I love to eat strawberries but, I also am not a fan of sugar.

 

This recipe will show you two methods of preserving your fruit without adding additional sugar.

The first method includes using sucralose. One common brand of sucralose is Splenda.

You can also make your sugar free jelly using Stevia.

Stevia is a natural sweetener that seems to be increasing in popularity with a lot of my readers. But, because sucraloseand Stevia are measured differently (stevia is a lot sweeter and less is needed as a result), I will present two methods of making this jam.

 

Both methods of making this jam without using sugar require using pectin.

Please use sugar free pectin that can be used in jam. You can find sugar free pectin for jam online.

Also needed for this recipe are containers, plastic containers are needed for the Stevia version while glass are needed for the sucralose version.
You are probably wondering why we will be needing plastic containers and not the glass kind. It is because we will be using the 'freezing' method of making this because we do not have the chemical advantages of using real sugar in this recipe.

 

Please prepare your containers by making sure that they are clean before starting as per manufacturers directions.

I should also mention that they should have lids on the as you probably do not want any of your jam escaping.
Also, transferring your Stevia jam to a glass container once it is made, should not be a big deal (think gift giving!).

A note about the pectin that we are using in this recipe.

We add pectin to most preserves that we make. Pectin is needed to react with sugar to firm up the jam and jelly. Because we are not adding sugar, we need to use a special kind of pectin. We have to use a specific pectin made or sugar free recipes. You can find the special pectin for sugar free recipes on Amazon at a good price.

No sugar added jams and jellies may not be as firm in texture.
This is because we are not adding sugar to it. As mentioned, when sugar reacts with the pectin, a firm texture results. Using sugar alternative simply sweetens the jam or jelly. It will not help in fighting bacteria or firm our preserves.

Also, with both methods we will not fill the containers or jars fully.
It is recommended that you leave about ⅛" from the top to allow for the possibility of expansion. Also, make sure that your containers/jars are securely sealed, wiping the rims before sealing helps ensure this.

How to Preserve Fruit Using sucralose (Splenda)

It is recommended that sucralose not be used in long-boil methods of preserving. Unlike sugar, sucralose/Splenda will not help control bacteria or aid in firming.
 

What you will need to Make Sugar Free Strawberry Jam using sucralose.
This is for a double batch. To make a single batch simple divide your ingredients in half.
 

  • Strawberries- 6 cups,hulled and mashed.
  • Water- 1 ½ cups.
  • No Added Sugar Pectin Two 1.75 ounce packets. Please make sure that your pectin is suitable for making sugar free jam for best results.
  • Granular Sucralose (Splenda)- 1 cup

How to Make Sugar Free Strawberry Jam using Sucralose

This requires using a traditional a canner or a canner rack and boiling water.
 

  • Please prepare your glass jars as indicated by the manufacturer.
  • Prepare your strawberries by removing the stems and them crushing them.
  • Use a medium sized stockpot such as one of these. We will work in two batches (unless you have opted to cut the recipe in half to make a single batch). In the stockpot, combine together the strawberries (3 cups), water (¾ cup) and pectin (1.75 ounces). Place this stockpot on the stove and bring it to a boil, stirring constantly. Once it boils for about a minute, you can carefully remove the stockpot from the stove and stir in the sucralose.
  • Transfer the mixture to your prepared canning jars leaving a bit of room at the top. Securely seal the jars, as indicated by the manufacturer.
  • You can continue making this by using a canner and following instructions. Or you can use a large stockpot and a canner rack and boil your jars for ten minutes. Allow your jars to cool completely as they will be hot.

Make sure that your containers have been cleaned as per the directions from the manufacturer.

What you will need to Make Sugar Free Strawberry Jam

 

  • Stevia Granular- 1 ⅓ cups of stevia that measures ¾ teaspoons to two teaspoons of sugar. Look for the equivalence to sugar as a measure for buying the right product for best results. Truvia Spoonable is one such product.
  • No Added Sugar Pectin - 1 packet (1.75 ounce). Make sure that your pectin can be used for sugar free use.
  • Water- 1 cup
  • Strawberries- 4 cups measured after they have been hulled and then crushed.

How to Make Sugar Free Strawberry Jam with Stevia.

 

  • Prepare your containers as indicated by the manufacturer.
  • In a large saucepan combine together the stevia, pectin and water. Bring this to a boil while stirring constantly. After this has boiled for a full minute, remove the saucepan from the heat and stir in the strawberries that you have prepared.
  • Transfer the mixture to your prepared containers and cover. Allow this to cool until set, about a day. Then store the containers in the freezer.

  • Prepare your containers as indicated by the manufacturer.In a large saucepan or stockpot combine together the stevia, pectin and water. Bring this to a boil while stirring constantly. After this has boiled for a full minute, remove the saucepan from the heat and stir in the strawberries that you have prepared.
