- My cake is made with strawberry flavored gelatin. But, you can use any flavor gelatin or even more than one if you choose to do so.

This cake can be made ahead of time which makes it really nice for a picnic, tailgate, or barbecue. To store this cake, simply cover it or place it in an air tight container and refrigerate it. I suggest that you add toppings before serving however.

This is a no added sugar version of a popular cake idea. We will first bake the cake and then poke holes into the cake to pour gelatin into.
To make the cake you will need a sugar free cake mix.
Yellow or white cake mix is preferred for this recipe. You can then top the cake with whipped topping or sugar free buttercream frosting.
Ingredients needed to make poke cake.
- Sugar Free Yellow Cake Mix. Yellow cake mix works fine for this recipe. You will also need the listed ingredients needed to bake that cake mix as well.
- Gelatin with No Added Sugar- 1 box (four serving size, these are usually around .3 ounces).
- Water- 1 cup boiling and ½ cup cold.
- Toppings- whipped topping, sugar free frosting, and/or sliced strawberries as desired.
How to make Sugar Free Strawberry Poke Cake
- Start by baking the cake as directed in the instructions. Bake your cake in a 9 X 13 or similar sized cake pan.
- Allow the cake to cool at room temperature for 15-20 minutes so that it is mostly set yet, still easy to poke the holes in it. To poke holes in your cake use the handle of a wooden spoon for wider holes or a strong straw for smaller holes Make the holes about ½ to 1 ½ inches apart and without hitting the pan (poke to about halfway to ¾ deep).
- For the next step we will make the gelatin and then pour it over the cake and let it seep through the holes that we just poked. Boil your (1 cup) water and place the gelatin mix into a small to medium sized bowl. When the water begins to boil carefully stir it into the gelatin that you placed into the bowl. Continually stir or whisk the water and gelatin until fully dissolved. Next, stir in the cold water to help thicken the mixture.
- For this step we will pour the dissolved gelatin over the cake. Do this slowly and allow for even distribution of the gelatin over the cake as we need it to seep into the poked holes that we created earlier.
- Allow the cake completely before adding the toppings. Whipped topping or sugar free frosting are popular along with sliced strawberries..

- 1 cup Water boiling
- ½ cup Water cold

- For the gelatin layer, boil the once cup of water. When the water begins to boil combine it the the gelatin mix and then stir in the cold water.
- For the next step we will pour the dissolved gelatin over the cake. Do this slowly and allow for even distribution of the gelatin over the cake as we need it to seep into the poked holes that we created earlier. Allow the cake completely before frosting or serving.
