Frosting
- ย Sugar alternative- or sugar free powdered sugar for a thicker consistency.
- Cream cheese- softened to room temperature.
- Milk- Regular milk, almond milk, or heavy cream can be used, depending on your desired consistency.
- Vanilla extract
How to make Red White and Blue Mini Cakes.
- ย Bake the mini cakes according to the packaging. Allow the cakes to fully cool before using them in this recipe.
- Make the frosting as indicated above.
- Prepare the cooled cakes by using a scoop to scoop out the centers to make a cup- like shell. Leave about ยฝ" on the bottom and sides or more if you want more cake with this recipe.
- For the frosting, place the ingredients in a mixer on medium speed. Beat until the frosting is fluffy (can take up to five minutes), stopping to scrape down the sides as needed
- Evenly distribute the frosting in the centers of the scooped out cakes. Then top each cake with fruit.
