    What you need to make mini cakes.

    Ingredients needed to make a sugar free patriotic cake.

    • Sugar free yellow cake mix and ingredients needed to make that cake mix.
    • Also, sugar free frosting or the recipe for frosting in this recipe.
    • Blackberries
    • Raspberries-
    • Blueberries
    • Strawberries- diced or cut, or as needed.

    Frosting

    • ย Sugar alternative- or sugar free powdered sugar for a thicker consistency.
    • Cream cheese- softened to room temperature.
    • Milk- Regular milk, almond milk, or heavy cream can be used, depending on your desired consistency.
    • Vanilla extract

    How to make Red White and Blue Mini Cakes.

    1. ย Bake the mini cakes according to the packaging. Allow the cakes to fully cool before using them in this recipe.
    2. Make the frosting as indicated above.
    3. Prepare the cooled cakes by using a scoop to scoop out the centers to make a cup- like shell. Leave about ยฝ" on the bottom and sides or more if you want more cake with this recipe.
    4. For the frosting, place the ingredients in a mixer on medium speed. Beat until the frosting is fluffy (can take up to five minutes), stopping to scrape down the sides as needed
    5. Evenly distribute the frosting in the centers of the scooped out cakes. Then top each cake with fruit.

    Tips for making the best mini cakes.

    Mini cake pans come in different sizes and materials. I like a 4 inch cake pan, which can also include a springform pan for easier use.

    Here are some more helpful tips for you.

    1. While I am using a basic sugar free cake mix, you can use your own cake recipe to make these cakes.
    2. This cake is made with a basic sugar free yellow cake mix. Feel free to use the cake mix of your choice.
    3. Make this recipe keto low carbohydrate friendly. Simply use a keto friendly cake mix instead.
    4. The easiest way to make this is to use a prebaked mini cakes if you can find them sugar free. Or, you can use dessert shells to make a lower sugar dessert.

    How to store mini cakes.

     

    These cakes should be stored in an air tight container. You can store them at room temperature as long as it is not too warm. While refrigerating will help these cakes last longer, it can affect the texture of these cakes.
