This is a sugar free recipe for blond brownies that are flavored with strawberry gelatin.
Instead of measuring out the needed dry ingredients, we are using a sugar free cake mix instead.
For added flavor we are adding sugar free white chocolate chips to the batter.

Ingredients needed to make these sugar free blondies.
- Sugar Free Yellow Cake Mix - 1 box (15-16 ounces).
- Sugar Free Strawberry Gelatin- 1 box (.6-.7 ounce).
- Eggs- 2 large.
- Vegetable Oil- ⅓ cup + 1 tablespoon (6.33 tablespoons total).
- Sugar Free White Chocolate Chips ½ cup.
- For the glaze- Sugar Free Powdered Sugar (1 ½ cups), Heavy Cream (2-3 tablespoons or as needed), and vanilla extract (1 teaspoon, clear preferred).
- Optional- crushed freeze dried strawberries or sugar free sprinkles for topping.
How to make Sugar Free Strawberry Blondies
- Preheat your oven to 325 and double prep a square baking dish for nonstick. I use parchment paper that overhangs two sides of the dish and then spray that with nonstick.
- Place the cake mix with the gelatin in a mixing bowl. Use a fork or whisk to blend them together.
- In a smaller bowl, mix together the eggs and the oil. Then pour the mixture into the mixing bowl with the dry ingredient until mix until just combined. Use a rubber spatula to fold in the white chocolate chips.
- Transfer the mixture to your prepare baking dish. Use the spatula to evenly distribute the batter. Then you can bake the blondies for 35-40 minutes or until the edges begin to brown.
- Allow the blondies to cool before adding the topping (15-20 minutes). Combine the ingredients for the glaze icing and distribute it over the cooled blondies. Allow this to set before removing the blondies to cut into squares.
PROTIP--> Refrigerating the just topped blondies will help the icing set faster.
