You will also need sugar free sprinkles for this cookie recipe.
Ingredients needed to make Funfetti cookies without sugar.
- White or Vanilla cake mix - 1 box.
- Eggs- 2 large. The eggs should be at room temperature.
- Butter- ½ cup melted. That is one stick and unsalted is preferred.
- Sugar Free Mini Chocolate Chips- ⅓ cup.
- Sugar Free Sprinkles - ⅓ cup.
- For the glaze: Sugar Free Powdered Sugar (½ cup) and milk (almond or low sugar, 2 tablespoons.)
How to make Sugar Free Funfetti Cookies.
- Preheat your oven to 325 and prep your baking sheets for nonstick. I line mine with parchment paper.
- Place the cake mix in mixing bowl and use a fork or whisk to break up any lumps. Then stir in the eggs and melted butter using a wooden spoon or rubber spatula. Fold in the chocolate chips.
- Use a cookie scoop to scoop the cookies on to your prepped baking sheets. Bake for 18-20 minutes or until the edges begin to turn golden. Some folks prefer these cookies when they are underdone however, these cookies do contain eggs. Allow the cookies to fully cool (about 20 minutes).
- For the glaze, simply use a fork or a whisk to blend together the sugar free powdered sugar with the milk. Top the cookies with the glaze and the sprinkle more sprinkles on top. Allow the glaze to fully set.
