    I like that these bars are also keto, low carb, and gluten free diet friendly!

    This is a tasty idea for a dessert bar but, without all of the added sugar.

    You can add an optional fruit topping to make these cheesecake bars even better!

    This cheesecake recipe however, is a no-bake recipe that is cut into bars.
     

    To make the low carbohydrate and gluten free crust, you will need almond flour. You can find almond flour here.

    This recipe is for anyone asking what desserts do not contain sugar.

    This recipe has no added sugar in it.
    Instead of the sugar, we are using a natural sugar alternative.

    However, you can add the optional topping to your cheesecake bars.
    The optional topping is made with real fruit.
    As a result, there may be some natural sugar from the fruit, although it may be a small amount.
     

    This is a sugar free dessert recipe that works any time of the year.

    Being a cheesecake bar, this recipe can be served as a fall dessert or holiday dessert.
    Simply serving this dessert without a topping makes this a well-rounded option.

    However, this cheesecake also works for spring or summer too!
    This is why I like the fruit topping on these bars.
    The topping adds a seasonal touch depending on the fruit that you use.

    This is a recipe that uses cream cheese as a main ingredient.
    For best results, please have the cream cheese softened to room temperature.

    1. This recipe has an almond flour crust. You can make the crust in advance if you desire.
    2. Fresh fruit is used as an optional topping for this bar recipe. You can use frozen fruit instead.
    3. The fruit topping is made into a jam before topping the cheesecake bars. You can simply use a sugar free jam instead to top your bars with.

     

     

    How to store cheesecake bars.

    These cheesecake bars should be stored in an airtight container.
    If properly stored, they should keep for up to a week refrigerated or longer if frozen.

    About this recipe for a keto low carb cheesecake.

    This is a no bake recipe for cheesecake.
    Cream cheese is used for flavor and stability.

    I have included a crust and topping with this recipe.
    The crust is a simple almond crust and the topping is made with fruit.
    Both are optional.

    Ingredients needed to make the almond flour crust.

    (feel free to make this crust-less).

    • Almond Flour- 1 ½ cups.
    • Butter- 4 tablespoons.
    • Powdered Sugar Alternative- 2 tablespoons.

     

    How to make the almond crust for this cheesecake.
    Prep a square baking pan for nonstick (I use parchment paper). In a medium bowl, mix the ingredients until just combined and then transfer the mixture to the prepped pan, pressing it in as needed. Refrigerate the crust to allow it to harden.
     

    Ingredients needed to make no bake sugar free cheesecake bars.

    • Almond flour crust (recipe above).
    • Cream Cheese- 16 ounces, softened to room temperature.
    • Powdered Sugar Alternative- ¾ cup.
    • Sour Cream- 1 cup.
    • Vanilla Extract- 1 teaspoon.
    • Lime Juice- 2 tablespoons.
    • Optional topping 1 ½ cup fresh or frozen mixed berries+ 1 tablespoon of sugar alternative (such as monk fruit).

    How to make Sugar Free Cheesecake Bars.

     

    • Prepare the almond crust as indicated above. Place the crust in your refrigerator while you make the filling for the bars.
    • In a mixing bowl, beat together the cream cheese, sweetener, and sour cream until smooth. Then stir in the lime juice.
    • Transfer the blended ingredients to the prepared crust, evenly spreading the mixture over the crust. Refrigerate the cheesecake until firm, about four hours.
    • To make the topping, combine the berries and sugar alternative in a saucepan over medium heat and stir until thickened.
