Hey, we have all probably asked this, or a similar to this, kind of question at some time.
The quick answer is yes, as long as there are no animal products added to the recipe.
Making a vegan pie is most challenging when it comes to making the pie crust.
A normal pie will have a crust made with butter or a similar kind of fat, however, I am including a vegan pie crust as part of this recipe. You can use the vegan pie crust or any pie crust of your choice (you can find my sugar free pie crust recipes here).
Here are some tips for making vegan no bake pie or cheesecake such as this one.
My biggest tip for this particular recipe is to read the directions before you start planning out your process.
Because this is a vegan recipe, it calls for a couple of steps to be done a head of time.
Here are more tips for you.
- You can easily make this recipe without it being a vegan recipe. Use plain yogurt instead of coconut yogurt, a regular sugar free pie crust, and a higher fat milk or whipping cream instead of the coconut milk.
- I am using a small amount of raspberries in this pie/cheesecake. Feel free use another fruit such as blueberries or simply omit the the fruit.
- This filling in this Cheesecake is sweetened with maple syrup. A sugar free alternative low carb can be used instead. These alternatives include Yakon Syrup, Agave and some Stevia liquid choices. Please check the labeling on the product to make sure that you are using an equivalent amount and not the same amount as the maple syrup as this may differ. If you are using a sugar alternative that measure 1:1 with sugar, you will need about one and a quarter cups of that.
This recipe is especially for anyone asking how do you make a vegan pie crust from scratch.
Here are the ingredients that you will need to make this vegan pie/cheesecake crust.
- Almonds- 1 cup raw and unsalted for best results.
- Walnuts- ½ cup, again raw and unsalted for best results.
- Dried Coconut- ½ cup (flaked or shredded).
- Dates- 1 cup. Medjool dates with the pits removed.
- Lemon Zest-1 tablespoon.
How to make the vegan crust.
(skip this if you are simply going with the sugar free non-vegan version of this recipe.)
Prep a square baking dish for nonstick. Parchment paper should work fine.
In a food processor or strong blender, place all of the ingredients and process until blended (grainy yet able to *stick together). Transfer this to the prepped baking dish and refrigerate until set.
*If you have trouble getting the ingredients to clump together, try adding another date or two as needed.
You may be wondering if you have to soak raw cashews for this recipe.
Soaking cashews gets them to the right consistency to mock creamed cheese or similar ingredients that would be normally used in a recipe like this one. If you choose to soak them overnight, please do so in the refrigerator. Oversoaking cashews can affect the taste and smell of them.

- Raw Cashews- 2 ½ cups. The cashews should be softened by soaking in water from three hours to overnight in a refrigerator.
- Coconut Yogurt- ½ cup. Unsweetened plain yogurt can be used as an alternative for non-vegans.
- Coconut Milk- ¾ cup. Substitute a fatty milk such as whole milk or heavy whipping cream (low in carbs) for nonvegan version.
- Maple Syrup- 1 cup. Any sugar alternative used should be equivalent to 1 ¼ cup of sugar for best results. I like something liquid in this recipe to help maintain the consistency of this pie.
- Vanilla Extract- 2 teaspoons.
- Lemon Zest- 1 tablespoon.
- Fruit- ½ cup. Frozen and small work best (blueberries, raspberries..)
How to make No Added Sugar Vegan No Bake Cheesecake
- Prepare the crust as indicated above or use your own crust. Soak the cashews from three hours to overnight if you have not done so.
- When you are ready to make this, drain the cashews from the water and give them a rinse. Then place the cashews into food processor or strong blender and give them a quick blend.
- Add the remaining ingredients, except for the fruit, to the blender/processor and blend until you get a smooth consistency.
- Transfer the ingredients to the prepared crust and gently mix in the fruit.
- Cover with plastic wrap and freeze overnight. Allow the cheesecake to sit on the counter for ten minutes before serving.
