This recipe is for anyone asking why is bark chocolate.
I suspect that someone came up with the name of chocolate bark many years ago because, perhaps, it reminded them of the bark from trees. Yes, I have heard that there is edible tree bark (who knew right?) and maybe chocolate bark looked like tree bark to someone at some time.
Chocolate bark is not made from trees however.
It is made from melted chocolate that usually has added ingredients which may include nuts and fruit. Chocolate bark is then cut or broken into pieces so that people like you and me can enjoy it.
Someone once asked me why is chocolate good for you.
There are 'experts' who say that, when eaten in moderation, chocolate may be good for you thanks to the flavanols that are in it. Researchers say that flavanols have been associated with health benefits including benefits with the heart.
Dark chocolate contains the most flavanols when compared to other kinds of chocolate.
So, if you are interested in getting some flavanol help with your chocolate bark, opt for a sugar free dark chocolate chips. You can find sugar free dark chocolate chips here.
Here are some tips for making chocolate bark.
I mentioned above that to get a better flavanol benefit, you should use a sugar free dark chocolate chip in this recipe. You can find sugar free dark chocolate chips here.
Also, here are some more helpful tips for you.
- Darker chocolate chips will yield a hard in texture bark. You can make a softer chocolate bark by using sugar free milk chocolate chips instead. However, using both kinds of chocolate chips should yield something in the middle.
- You can make this recipe even more interesting by adding some melted sugar free white chocolate to the chocolate bark once it has hardened. However, you can find my recipe for sugar free white chocolate here.
- The easiest way to melt chocolate, in my opinion, is to microwave it. Use a microwave-safe bowl and microwave the chocolate until it is melted. You will need to stop the microwave every thirty seconds to stir the chocolate as well.
How to store chocolate bark.
For best results, store your hardened chocolate bark in an airtight container.
It should keep at room temperature if properly stored for about a week. This depends also on the ingredients that you are adding to your bark (fresh fruit will change this for example).

- Sugar Free Chocolate Chips- 2 bags (8-9 ounce). For a harder bark, use a darker sugar free chocolate chip. However, for a softer chocolate bark, use sugar free milk chocolate. For something in the middle, try a sugar free semi-sweet sugar free chocolate chip.
- Vanilla Extract- ½ teaspoon. Feel free to sub in another extract such as amint extract.
- Nuts- 1 cup. This can include peanuts, hazelnuts, pecans, or even walnuts. Large nuts should be chopped to size.
- Dried Fruit- up to 1 cup. This can include cranberries, raisins, or even barberries.

How to make Sugar Free Chocolate Holiday Bark
- Start by prepping a rimmed baking sheet with parchment paper that overlaps the edges enough to use the overlap as a handle later on.
- Use a microwave or double boiler to melt the chocolate chips. You may need to do this in batches if your microwave safe bowl is not large enough to hold all of the chocolate chips. If using a microwave, be sure to stop the microwave every 30 second to stir and also use a microwave safe bowl. Double boiler method will need to be continually stirred and on low heat.
- Stir the vanilla extract into the chocolate and then transfer the melted chocolate to the prepared rimmed baking sheet. Be sure to evenly spread the chocolate out. The bark should be about ⅛- ¼" thick for best results.
- If you are pouring melted sugar free white chocolate over the bark you will need to allow for the darker chocolate to harden. This should take about an hour. then pour the melted white chocolate over this and continue with the next step. If you are not adding the melted white chocolate, you can skip this step.
- Next, evenly sprinkle the remaining ingredients on top of the still warm chocolate. Then allow the chocolate bark to cool and harden.
- Once the bark has hardened you can break or cut it into pieces and enjoy or store for later enjoyment.
