For best results, I suggest using actual lemon juice from lemons and not a prepared lemon juice which may also have other ingredients (sugar!) added to it.

Almond flour adds to the flavor of these bars and is friendly to the keto, low carbohydrate, gluten free, and vegan diets. An alternative to almond flour could be another nut flour that measures the same (ie not coconut flour) or oat flour.
Ingredients needed to make lemon bars.
- Maple Syrup- ⅓ cup. I mentioned that you can use use a maple syrup alternative instead of maple syrup itself. Just make sure that it measures like maple syrup for best results.
- Vanilla Extract- 1 teaspoon.
- Lemon Juice- 2 tablespoons. That is about one half of an average sized lemon juiced.
- Almond Flour- 2 cups. Really, any consistency of almond flour should work in this recipe. Other nut flours added in with or instead of almond flour should work as well.
- Lemon Zest- 1 tablespoon. This is about one average sized lemon that has been zested.
- Shredded Coconut- 2 cups. Unsweetened coconut is preferred for sugar free folks.
How to make Gluten Free No Bake Lemon Keto Bars
- Line a square baking dish with parchment paper that overhangs the the dish.
- In a mixing bowl, mix together the maple syrup, vanilla extract, and lemon juice.
- Next, in another mixing bowl, blend together the almond flour, the lemon zest and the coconut.
- Add the wet ingredients from the first bowl to the second bowl. Blend this until a thick 'paste' forms. Then transfer the paste to the prepared baking dish.
- Press the paste into the baking dish until evenly dispersed and somewhat firm. You can use your hands to do this. The refrigerate until firm (about two hours).
- Cut the bars into squares and top with optional ingredients such as cut up lemons or sugar free powdered sugar for serving.
