The good news is that recipes such as this one, work for both keto and low carb diets.

While not a big difference there is a difference between keto and low carb diets.

A low carb diet focuses on carbohydrates that may be from protein as well as fats.
In the keto diet, carbohydrates are more restricted as is protein too.
 

Since this is a low carbohydrate recipe you may be asking is lemon juice necessary for cheesecake.

To be honest, if you want the true taste of lemon, the answer is yes.
Real lemon juice is essential if you want a real lemon flavor in a cake such as this one.

Thankfully, there are not a lot of carbohydrates in a lemon.

The average lemon yields around two tablespoons of juice. However, this nets out at only about three carbs thanks to the fiber in lemon juice.

The recipe for Low Carb Lemon Cheesecake

Ingredients needed to make Low Carb Cheesecake Bars

  • Almond Flour 1 ½ cups. Make sure that you are using a blanched almond flour rather than almond meal for best results and texture.
  • Sugar Alternative- ¾ cup divided. Please use a granular sugar alternative that can be baked with and that measures 1:1 with sugar for best results.
  • Salt- ¼ teaspoon.
  • Butter- ¼ cup melted. That is like a half of a stick.
  • Cream Cheese- 3 eight ounce packages, softened to room temperature. Use full fat cream cheese for best results.
  • Lemon Zest- 1 tablespoon (about one average lemon).
  • Lemon Juice- 2 tablespoons (about one average lemon as well). If you use a lemon juice product, make sure that it does not have added sugar in it.
  • Eggs-2. Please have your eggs at room temperature.
  • Vanilla Extract- 1 teaspoon.

How to make Low Carb Lemon Cheesecake

 

  • Preheat you oven to 350 and prep a 9 X 11 baking dish for nonstick.
  • To make the crust, use a medium mixing bowl to mix together the almond flour, ¼ cup of the sugar alternative, salt and melted butter. Transfer this mixture into the prepped baking dish and press it in so that the baking dish is fulling and evenly lined with the ingredients. Then bake for ten minutes.
  • Meanwhile, as the crust is baking, in a large mixing bowl cream together the room temperature cream cheese, lemon zest, lemon juice and remaining sweetener. Once combined, add in eggs and vanilla extract. Mix the ingredients until creamy and combined.
  • Remove the crust from the oven and allow it to cool for five minutes. Then transfer the mixed ingredients from the large mixing bowl to the baking dish placing it on top of the crust.
  • Return the baking dish to the oven and bake for 20-25 minutes or until the cheesecake mixture has set. Remove from the oven and allow to cool. Once the cheesecake has cooled, place in the refrigerator for to to four hours to set.
  • When ready to serve, cut the lemon cheesecake into squares and serve with a topping such as homemade whipped cream and your favorite fruit.
