I like that they can be made without adding a bunch of sugar to them as well!
Sugar Free Lemon Sheet Cake Bars
This is the perfect kind of a cake for this time of year!
I like that you can make it and serve it in the same sheet cake pan if you really wanted to!
By the way, this recipe goes great with some sugar free buttercream frosting on top of it.

The cake in this recipe is based upon another sugar free cake recipe that I have posted.
We will be using the dry ingredients in that recipe to help us make this one.

There is also a 'secret' ingredient that goes into this recipe.
By 'secret' ingredient I mean, well, hack. This ingredient will help make this cake taste even more moist and tasty to eat!
We will be using sugar free lemon pudding in this recipe.
Unlike other recipe that call for pudding, this one calls for the pudding to already be made and ready to go. If you cannot find sugar free lemon pudding, you could use a vanilla pudding with a teaspoon or so (I would taste to be ascertain) of lemon extract.

Good source of calcium when mixed with milk; sugar-free, fat-free
Just add milk and mix; sets in five minutes.
I mentioned earlier that you will need a sheet cake pan to bake your cake in.
Your pan should have a rim around it. That rim should be 1 - 1 ½" tall. an 11 X 17, 10 X 15 or similar sized sheet cake pan should work however, the size could also correlate with how tall you would like your cake to be.
I also mentioned that this cake is usually served frosted.
You can find my recipe for sugar free buttercream frosting here. However, also you may want to try a Sugar Free Cream Cheese frosting such as one of these.
This lemon sheet cake can be sliced into bars.
Simply slice the frosted cake into rectangles and serve in order to do so. Or, you could go the 'cake' route by slicing this frosted cake into individual sized squares.

The recipe for Sugar Free Lemon Sheet Cake Bars
As mentioned, you will need sugar free lemon pudding in this recipe. Follow the directions on the package to prepare this. The prepared and cooled lemon pudding is an ingredient in itself.
To bake this cake you will need a sheet cake pan to bake your cake in.
Your pan should have a rim around it. That rim should be 1 - 1 ½" tall. an 11 X 17, 10 X 15 or similar sized sheet cake pan should work however, the size could also correlate with how tall you would like your cake to be.
What you will need to make this recipe for lemon cake.
- Flour- 3 cups (AP).
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. I have not tried either of the alternative flours in this recipe. - Baking Powder- 2 teaspoons.
- Salt- ¼ teaspoon (basically a pinch will do).
- Sugar Alternative- 1 ¾ cups, 1:1 equivalent to sugar. Granular is recommended.
- Lemon Extract 2 teaspoons.
- Vanilla Extract- 2 teaspoons.
- Vegetable Oil- 1 tablespoon. Can sub in melted butter or another similar oil.
- Lemon Zest- 1 ¼ tablespoon.
- Eggs- 4.
- Sugar Free Lemon Pudding - 1 (4 to 4 ½ serving box) prepared as directed on the package.
How to make Sugar Free Lemon Sheet Cake Bars
- Start by preheating your oven to 325 and prep your baking sheet for nonstick.
- In a mixing bowl, sift or whisk together the flour, baking powder, and salt. Then whisk in the sugar alternative.
- Beat in the lemon extract, vanilla extract, lemon zest, and oil and then add the eggs, one egg at a time, mixing between additions.
- Next fold in the pudding by hand.
- Bake for 24-28 minutes or until a toothpick comes out clean. Allow the cake to cool before frosting it.
